1 2/3 cups sugar (or more or less to suit taste)

1 cup mashed banana (about 3 medium)
2 cups cake flour

Steps:

  • Set oven to 350 degrees F.
  • Grease a 9 x 5-inch loaf pan OR 3 mini loaf pans.
  • In a bowl, cream together the butter or margarine and the sugar, until light and fluffy.

  • Sift Flour Baking Powder, Baking Soda, and Salt in Bowl (set aside).
  • Mash Bananas, add sour cream then stir to blend (set aside).
  • Cream butter with mixer (I use my Kitchenaid Mixer), add Sugar, then add eggs one at a time, beating well, stir in Vanilla Extract.

  • Add Flour Mixture into mixture, continue to beat 3 minutes, then stir in cranberries and walnuts.
  • Pour mixture into Loaf Pan and Bake at 325 F (yes this low OT is correct) between 60-75 minutes ~ test with toothpick in center.
  • Cool 15 minutes; remove from pan. Slice ~ Serve ~ Enjoy! Can wrap tightly and store in refrigerator for immediate use or freeze.

This is an excellent recipe for banana blueberry loaf! Be sure to mash the bananas with a fork, don't puree them, this gives for a better texture to the loaf. This recipe makes two loaves, I have even made these in mini loaf pans also. These loaves freeze wonderful, and are even taste better the following day! I have used cranberries in place of the blueberries --- I have recently reduced the ingredient amounts to this recipe to yield one loaf instead of two, you may omit the cinnamon if desired.

  • 4. I can hardly wait to get it out of the pan before cutting into it and then slathering it with butter! It cuts cleaner and thinner if you can wait until it is completely cool.

PS I use ground rolled oats here because one day I ran out of flour, so I improvised, and it turned out great! ALSO: I have a VERY old oven, so for some reason the food cooks quicker, so I'd keep an eye on the loaf once you reach the 40 minute mark. AND raisins are totally optional.   • Preheat oven to 350°F.
  • Mix dry ingredients.
  • Mash bananas with a potato masher (if you have a fancier or better tool, go for it).
  • Mix with wet ingredients. (not raisins).
  • Mix wet ingredients into dry ingredients.
  • Fold in raisins. Try not to mix too much.
  • Pour into a 8x5 or 8x4 or 8x3 pan. Whatever you have on hand.
  • Cook about 45 minutes. I think it's closer to 1 hour, but my oven is really old and doesn't cook normally.
  • *Once the top is set, I usually mix about 1 tbsp honey, 2 tbsp brown sugar and cinnamon and glaze the top. You can sprinkle some oats on there too!

This is my go-to banana bread I make to use up those brown bananas. I also peel and freeze overripe bananas and keep them until I feel like baking. Easy to bake, moist muffins or mini-loaf cakes, made with variety of ingredients you probably have on hand. Original recipe. I have used fewer bananas, more carrot or apple, etc, always with good results. I have made with double the sugar, which is a little too sweet for me. If you like your muffins sweet, add more sugar to taste. These keep well, but I never had to store them more than 3 days.

3 bananas (mashed)
1 teaspoon bicarbonate of soda
1 teaspoon baking powder

  • Preheat oven to 175C fan forced (for conventional I would recommend about 185C).
  • Grease and line (with baking paper) a standard loaf tin.

1 cup mashed ripe bananas (about 2 medium)
1/3 cup fat-free plain yogurt
1 teaspoon vanilla extract
1-1/2 cups all-purpose flour
1/2 cup whole wheat pastry flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 cup peanut butter chips
1/2 cup semisweet chocolate chips, melted

Steps:

  • Directions In a large bowl, beat butter and sugar until crumbly. Add eggs, one at a time, beating well after each addition. Beat in the bananas, yogurt and vanilla. Combine the flours, baking soda, salt and cinnamon; gradually add to butter mixture just until moistened. Fold in peanut butter chips. Remove 1 cup batter to a small bowl; stir in chocolate until well blended. Pour half of the remaining plain batter into a 9-in. x 5-in. loaf pan coated with cooking spray; top with half of the chocolate batter. Repeat layers. Cut through batter with a knife to swirl. Bake at 350° for 40-50 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack. Yield: 1 loaf (12 slices).

This is a recipe I tore out of a magazine. i made it this week, and it was so delicious! It disappeared very quickly, and I have been asked to make another. My kids loved it and took slices in their lunch boxes. Even my eldest, who is kinda fussy and never eats cake..just LOVED it!

Number Of Ingredients 9

2 cups self raising flour
1 teaspoon bicarbonate of soda
1/2 teaspoon ground nutmeg
1 cup pitted dates, finely chopped
2/3 cup brown sugar, firmly packed
3/4 cup orange juice
1 large egg
60 g butter, melted
1 cup ripe mashed banana

Steps:

  • Grease a 14cmx21cm loaf pan, line base and long sides.
  • Combine flour, bicarb, and nutmeg in a large bowl. Stir in dates and brown sugar. Make a well in the centre, add juice, butter, egg, and bananas. Mix with a wooden spoon until smooth. Pour mixture into prepared pan.
  • Cook at 180C for about 1 hour.
  • Stand cake in pan for 5 minutes before turning out on a rack.
  • Serve warm or cold, with a little butter.

2 c all purpose flour
2 tsp baking powder
3/4 tsp salt
1/4 tsp baking soda
1/2 c shortening
1/2 c sugar
2 eggs
1 c mashed banana (about 3 medium bananas)
2 Tbsp milk
1/2 c chopped nuts (walnuts or pecans)
1/2 c crasins (or any dried fruit you prefer)
1/2 c chocolate chips

Steps:

  • 1. In a separate bowl, combine thoroughly the first 4 ingredients, set aside.
  • 2. Cream shortening & sugar till light & fluffy.
  • 3. Add eggs & beat well.
  • 4. Combine banana & milk; add to creamed mixture alternately w/flour mixture,(gently beating with mixer or incorporated by hand) just until smooth after each addition.
  • 5. Fold in nuts, dried fruit and chocolate chips.
  • 6. Turn into a greased and lightly floured 9x5x3 inch loaf pan.
  • 7. Bake @ 350 degrees for 45 to 50 minutes. Check the center of the loaf with a toothpick, if it comes out clean, the loaf is done.
  • 8. Cool for 1 hour before cutting. Serve plain or buttered. Enjoy!

4 tablespoons unsalted butter
1/4 cup light brown sugar
2 eggs, lightly beaten
3/4 cup whole wheat flour
3/4 cup plus 1 tablespoon all-purpose flour
2 teaspoons baking powder
2 ripe bananas, roughly mashed
4 ounces raspberries
Handful of rolled oats

Steps:

  • Preheat the oven to 350°F and line an 8 1/2 x 4-inch loaf pan with baking parchment. I make sure that the paper overlaps a little bit, which makes it much easier to remove the loaf from the pan once it is cooked.
  • Cream the butter and sugar together in a large bowl until nicely combined. Add the eggs in two batches, beating well between each addition. The mixture won't quite look its best, but it will soon come good! Add the whole wheat flour, all-purpose flour and baking powder and stir through until nicely mixed in. Then stir the bananas in, followed by a gentle fold in of the raspberries.
  • Pour the mixture into the loaf pan, smooth it out a bit with the back of a spoon and then sprinkle the oats evenly over the top. Bake in the oven for 50-55 minutes or until a skewer comes out clean when the loaf is pierced in the center.
  • Leave to cool in the pan for a few minutes before lifting out and leaving to cool completely on a wire rack. The loaf will stay at its best for 1 to 2 days when stored in an airtight container.

1 cup banana, ripe and mashed
1 teaspoon vanilla
2/3 cup sweetened coconut, shredded
1/2 cup pecans or 1/2 cup walnuts, chopped
1/2 cup semi-sweet chocolate chips

Steps:

  • Heat oven to 350 degrees. Coat 9x5x3 inch or similar sized loaf pan with cooking spray.
  • Sift flour, baking powder, cinnamon, baking soda, and salt into bowl.
  • In a larger bowl beat eggs, sugar, and vegetable oil. Add buttermilk, ripe bananas, and vanilla. Beat until combined. Add flour mixture in slowly and continue to combine.
  • Fold in coconut, nuts, and chocolate chips. Transfer to baking pan.
  • Bake in oven for about an hour, or until wooden pick inserted into center comes out almost clean. Let cool on rack for 10 minutes. Then, if desired, turn loaf out onto rack and let cool completely.

Tips:

  • For a moist and flavorful banana loaf, use ripe bananas. The riper the bananas, the sweeter and more flavorful the loaf will be.
  • Use good quality butter. This will give the loaf a rich and decadent flavor.
  • Don't overmix the batter. Overmixing will make the loaf tough.
