3 large, ripe bananas
2 1/2 cups rolled oats
1 cup peanut butter (my family prefers chunky)
1/3 cup semisweet chocolate chips
1/4 cup honey
2 teaspoons cinnamon
Pinch of salt

Steps:

  • Preheat the oven to 350 degrees F. Line a baking sheet with parchment.
  • Mash the bananas with a fork in a large bowl. Add the oats, peanut butter, chocolate chips, honey, cinnamon and salt, and stir until just combined. (The mixture may be thick and hard to stir.)

2 cups old-fashioned oats
1 heaping cup pitted dates, finely chopped
1/4 cup neutral oil, such as canola or vegetable oil
1/2 teaspoon ground cinnamon
1/2 cup chocolate chips, raisins or chopped walnuts
1/4 teaspoon kosher salt

Steps:

  • Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper or silicone baking mats.
  • Place the bananas in the bowl of a stand mixer fitted with the paddle attachment. Beat until the bananas are mashed. Stop the machine and add in the oats, chopped dates, oil, cinnamon, chocolate chips and salt. 2 c oatmeal (I use quick oatmeal)

2 cups old fashioned oats
1 cup pitted and chopped dried dates
1/4 cup oil
1/2 teaspoon cinnamon
1/2 cup chocolate chips, walnuts or raisins
1/4 teaspoon salt
