Number Of Ingredients 12

1 1/2 c. Sugar
1 c. Sour Cream
1/2 c. Soft butter
2 Eggs
1 1/4 c. mashed bananas - about three
2 t. vanilla
Cream the above.
Beat in:
2 c. flour
1 t. salt
1 t. baking soda.
Add 1/2 c. (or more) chopped nuts.

Steps:

  • Spread in greased 15 1/2 by 10 1/2 in pan Bake at 375 degrees for 20-25 minutes until light brown. Cool first, then frost. Icing: Heat 1/4 c. butter over medium heat until delicate brown. Mix in 2 c. powdered sugar, 1 t. vanilla and about 2-3 T. milk until spreadable. Cut into 2 1/2 inch squares.

1 1/2 cups Sugar
2 pieces Eggs, lightly beaten
1 cup Sour Cream
1/2 cup Butter, softened
1 1/2 cups Bananas, very ripe
2 teaspoons Vanilla
2 cups Flour
1 teaspoon Baking Soda
1 teaspoon Salt
1/2 cup Walnuts, chopped (Optional)
1 can Cream Cheese Frosting, canned
1/2 cup Walnuts, finely chopped (Optional)

Steps:

  • Preheat oven to 350-degrees.
  • Prepare jelly roll pan with non-stick spray.
  • In a separate bowl, combine Flour, Baking Soda, and Salt. Set aside.
  • Mix Sugar, Eggs, Sour Cream and Butter in mixing bowl on low speed for 1 minute, occasionally scraping bowl.
  • Mix in broken Bananas and Vanilla on low speed about 1 minute.
  • Add flour mixture a spoonful at a time, mixing in between.
  • Stir in 1/2 cup chopped Walnuts (optional).
  • Spread cake batter in jelly roll pan.
  • Bake 20-25 minutes at 350-degrees or until lightly browned.
  • Let cool.
  • Frost with canned Cream Cheese Frosting (or simple powdered sugar glaze).

This is my husbands favorite recipe--- for the frosting! So I usually double the frosting and he eats that on his toast!!!

1 1/2 c sugar
1 c sour cream
1/2 c unsalted butter, softened
2 eggs
1 1/2 c mashed banana
2 tsp vanilla
2 c all-purpose flour
1 tsp salt
1 tsp baking soda
1/2 c chopped nuts
BROWNED BUTTER FROSTING INGREDIENTS
1/4 c butter
2 c powdered sugar
1 tsp vanilla
3 Tbsp milk

Steps:

  • 1. Heat oven to 375 & grease and flour jelly roll pan (15x10). Mix sugar, sour cream, butter and eggs in large mixer bowl on low speed, scraping bowl occasionally, 1 minute
  • 2. Beat in bananas and vanilla on lo speed 30 seconds. Then beat in flour, salt, and baking soda on med. speed, scraping bowl occasionally for 1 minute. Stir in nuts and spread in pan
  • 3. Bake until light brown, 20-25 minutes. Cool. Frost with Browned Butter frosting (see recipe below) and cut into bars
  • 4. Browned butter frosting: Heat 1/4 c butter over medium heat until delicate brown; remove from heat and mix in 2 c. powdered sugar. Beat in 1 tsp vanilla and 3 tbsp. milk until smooth and of spreading consistency

Tips:

- For a richer flavor, use dark chocolate chips instead of semi-sweet chocolate chips. - If you don't have sour cream, you can substitute plain yogurt. - To make the bars even more decadent, add a layer of chocolate ganache or caramel sauce between the banana layer and the sour cream layer. - For a fun and festive touch, sprinkle the top of the bars with chopped nuts, sprinkles, or candy pieces before baking. - If you want a gooey center, use slightly underripe bananas. - If you prefer a firmer center, use ripe bananas. - Be sure to use a 9x13 inch baking pan, otherwise the bars will be too thick or too thin. - Don't overmix the batter, or the bars will be tough. - Bake the bars until a toothpick inserted into the center comes out clean. - Let the bars cool completely before cutting them into squares.
