BBQ TURKEY

BBQ Turkey image

This is a great BBQ Turkey recipe. We almost never have any leftovers. This recipe can be used with almost any size bird.

Provided by Julie G

Categories     Meat and Poultry Recipes     Turkey     Whole Turkey Recipes

Time 5h45m

Yield 12

Number Of Ingredients 7

2 cups butter, divided
1 (15 pound) whole turkey, neck and giblets removed
¼ cup chicken soup base
3 sweet onions, peeled and cut into wedges
5 apples, cored and cut into wedges
2 tablespoons minced garlic, or to taste
1 (750 milliliter) bottle dry white wine

Steps:

  • Preheat a gas grill for low heat.
  • Rub some of the butter all over the turkey, inside and out, then rub all over with chicken base. Cut remaining butter into cubes and toss with onions, apples, and garlic in a large bowl. Stuff the bird with this mixture and place in a disposable aluminum roasting pan. Fold the turkey skin around the neck area to cover the hole and then turn the turkey over and pour wine into the opening at the other end until the turkey is full or the bottle is empty. Set the turkey breast side up.
  • Place the roasting pan on the grill and cover loosely with aluminum foil. If you have a pop up timer or heat safe meat thermometer, insert it into the turkey breast. Close the lid.
  • Roast until the temperature in the breast reads 170 degrees F (75 degrees C) and the temperature in the thickest part of the thigh reads 180 degrees C (80 degrees C), about 4 hours depending on the temperature of your grill. When the temperature is getting close, remove the aluminum foil covering the turkey and allow it to brown during the final minutes of cooking. If it starts to brown too much, just cover it back up. Allow the turkey to rest for at least 20 minutes before carving.

CINCINNATI TURKEY CHILI

Cincinnati Turkey Chili image

Cincinnati chili was created by immigrants from Macedonia at a restaurant in Ohio. More like a Greek-spiced meat sauce than American chili, what sets this dish apart is that it is ladled over spaghetti and diners choose the various toppings. A simple 2-way is just chili and spaghetti and the full 5-way adds cheese, raw onion and beans. This take on a classic swaps turkey for beef and stops at 4-ways.

Provided by Food Network Kitchen

Categories     main-dish

Time 40m

Yield 4 servings

Number Of Ingredients 12

2 tablespoons extra-virgin olive oil
1 onion, finely chopped
2 cloves garlic, finely chopped
Kosher salt and freshly ground pepper
1 1/4 pounds ground turkey
1 tablespoon chili powder
1 teaspoon ground cinnamon
1 teaspoon unsweetened cocoa powder
1 tablespoon Worcestershire sauce
1 28-ounce can crushed tomatoes
8 ounces spaghetti
1 cup finely shredded sharp cheddar cheese (about 4 ounces)

Steps:

  • Bring a large pot of water to a boil. Meanwhile, heat the olive oil in a large wide pot or dutch oven over medium-high heat. Reserve 1/3 cup chopped onion, then add the rest of the onion and the garlic to the pot; season with salt and pepper. Cook, stirring, until softened, 3 to 5 minutes. Add the turkey and cook, breaking it up into small pieces, until cooked through, about 3 more minutes. Add the chili powder, cinnamon, cocoa powder, 1/2 teaspoon salt and a few grinds of pepper. Cook, stirring, until the spices are lightly toasted, about 1 minute. Stir in the Worcestershire sauce, then add the tomatoes and 1 cup water.
  • Bring the chili to a simmer. Cook, stirring occasionally and adjusting the heat as needed to maintain a steady simmer, until the sauce reduces slightly, about 20 minutes.
  • Meanwhile, salt the boiling water, add the spaghetti and cook as the label directs for al dente; drain.
  • Season the chili with salt and pepper. Divide the spaghetti among shallow bowls and top with the chili. Sprinkle with the reserved chopped onion and the cheese.

TURKEY CHILI

Turkey Chili image

Rather than browning the meat first, which doesn't do much for lean ground turkey and can actually make it tough, this recipe prioritizes cooking down the vegetables first. Onions and canned tomatoes fried in olive oil provide an umami-rich flavor base for turkey's blank canvas, and the adobo sauce from canned chipotle peppers does a lot of this dish's heavy lifting. Optional toppings like shredded cheese and sour cream help cool down the spice. One of the best ways to enjoy this simple but powerful chili is over French fries with melted cheese, or tossed with some cooked spaghetti. It's so great on its own, as well.

Provided by Eric Kim

Categories     dinner, easy, soups and stews, main course

Time 45m

Yield 2 to 4 servings

Number Of Ingredients 8

3 tablespoons olive oil
1 large white onion, diced
1 (28-ounce) can whole peeled tomatoes
Salt
2 tablespoons chili powder
1 pound ground turkey
1 (7-ounce) can chipotle peppers in adobo sauce
Shredded extra-sharp Cheddar, sour cream and whole cilantro leaves, for serving (optional)

Steps:

  • In a large pot or Dutch oven, heat the oil over medium-high heat. Add the onion and cook, stirring occasionally with a wooden spoon, until translucent and starting to brown at the edges, 5 to 7 minutes.
  • Use a fork to fish the tomatoes out of the can and add them to the pot, leaving behind the juice for now. Season with salt and cook the tomatoes, breaking them up with the wooden spoon and stirring occasionally, until jammy and their liquid has reduced significantly, 5 to 7 minutes.
  • Stir in the chili powder and cook until fragrant, just a few seconds. Add the ground turkey, season with salt and stir to combine, breaking up the meat with the spoon. (Don't worry about browning or cooking it through here, as it will do so when it simmers.) Stir in the reserved liquid from the tomato can.
  • Use the fork to fish out as many chipotle peppers from the can as you would like, starting with two or three, and add to the pot, breaking them up with the wooden spoon, along with all of the adobo sauce. The more peppers you use, the spicier your final chili will be; if you like spice, just add the entire can. (Store any peppers you don't use in an airtight container in the refrigerator for up to a week and in the freezer for up to 2 months.) Fill the empty chipotle can with cold tap water, swish it around and add to the pot. Stir to combine.
  • Bring the chili to a simmer over medium-high heat - you should see occasional small bubbles breaking the surface of the mixture - then cover the pot and reduce the heat to continue simmering over medium-low, stirring occasionally, until the liquid has reduced and the tomatoes have broken down, about 20 minutes. The chili should look thick and shiny, but not too thick that you couldn't ladle it into a bowl. (If it's too watery, then simmer with the lid off for another 5 minutes, stirring occasionally.) Taste and add more salt if desired. Serve with cheese, sour cream and cilantro, if using.

  • When charcoal turns grayish white (start checking coals after 15 minutes), the grill will be at its hottest and will then begin to cool off. It will be at the proper medium-hot temperature when you can hold your hand 5 inches above the grill rack (directly over the coals) for 3 to 4 seconds.
  • Gas Grill Instructions: Preheat all burners on high, covered, 10 minutes, then adjust heat according to recipe.

BEST TURKEY CHILI FOR A CROWD

Best Turkey Chili for a Crowd image

This is my family's favorite turkey chili for a crowd that we serve with freshly baked cornbread, sour cream, and shredded cheeses for a topping. The secret ingredient is the cinnamon that makes this special. We like spicy so be careful adding the cayenne pepper. This is even better the second day.

Tips:

  • Choose the right turkey: Fresh or frozen turkey breast or thighs are both good options, but make sure they're boneless and skinless. Ground turkey can also be used, but it will result in a less flavorful chili.
  • Season the turkey well: Turkey can be a bit bland on its own, so be sure to season it well before cooking. A simple combination of salt, pepper, garlic powder, and onion powder is a good starting point. You can also add other spices like chili powder, cumin, or paprika to taste.
  • Cook the turkey thoroughly: Turkey should be cooked to an internal temperature of 165 degrees Fahrenheit to ensure that it is safe to eat. You can use a meat thermometer to check the temperature.
  • Use a variety of beans: Different beans offer different flavors and textures to chili. A good combination is to use a mix of black beans, kidney beans, and pinto beans. You can also add other beans like chickpeas or lentils if you like.
  • Add vegetables to the chili: Vegetables add flavor, texture, and nutrients to chili. Some good options include onions, bell peppers, carrots, and celery. You can also add other vegetables like corn, zucchini, or squash.
  • Use a good quality chili powder: The chili powder is one of the most important ingredients in chili, so it's important to use a good quality one. Look for a chili powder that is made with a blend of different peppers and spices. You can also make your own chili powder by grinding dried peppers and spices in a coffee grinder or blender.
  • Let the chili simmer: Simmering the chili allows the flavors to meld together and develop. The longer you simmer the chili, the better it will taste. Aim to simmer the chili for at least 30 minutes, but longer is even better.
  • Serve the chili with your favorite toppings: Chili is a versatile dish that can be served with a variety of toppings. Some popular toppings include sour cream, shredded cheese, diced avocado, and chopped cilantro.

Conclusion:

Turkey chili is a delicious and easy-to-make meal that is perfect for a cold night. It is packed with flavor and nutrients, and it can be customized to your liking. So next time you're looking for a hearty and satisfying meal, give turkey chili a try.
