PECAN SANDIES

Pecan Sandies image

Dense and buttery, this cookie is closely related to shortbread, which originated as a holiday treat in ancient Scotland. These pecan sandies are simply delicious.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes     Cookie Recipes

Yield Makes about 5 dozen

Number Of Ingredients 7

1 cup (2 sticks) unsalted butter
1/3 cup granulated sugar
1 teaspoon pure vanilla extract
2/3 cup pecans, finely ground
1 2/3 cups all-purpose flour
Pinch of salt
1/4 cup confectioners' sugar

Steps:

  • Heat oven to 350 degrees. In the bowl of an electric mixer fitted with the paddle attachment, cream butter and granulated sugar on medium-high speed until light and fluffy, 2 to 3 minutes. Beat in vanilla.
  • Mix ground pecans with flour and salt, and add to butter mixture. Beat, beginning on low speed and increasing to medium, until combined, about 1 minute.
  • Lightly flour palms, if necessary, and roll dough into 3/4-inch balls. Place on an ungreased baking sheet 1 inch apart. Bake until just brown on edges, 20 to 25 minutes. Remove cookies from baking sheet while still warm; sift confectioners' sugar over tops.

Tips:

  • Measure your ingredients accurately. This is especially important for baking, as even a small difference in the amount of an ingredient can affect the outcome of your recipe.
  • Use high-quality ingredients. The better the ingredients you use, the better your cookies will taste. Look for fresh, organic ingredients whenever possible.
  • Don't overmix the dough. Overmixing can make the cookies tough. Mix the dough just until it comes together.
  • Chill the dough before baking. This will help the cookies hold their shape and prevent them from spreading too much in the oven.
  • Bake the cookies at the right temperature. The temperature of your oven can affect the texture of the cookies. Be sure to preheat your oven to the correct temperature before baking.
  • Let the cookies cool completely before storing them. This will help them keep their shape and prevent them from becoming soggy.

Conclusion:

Pecan sandies are a delicious and easy-to-make cookie that is perfect for any occasion. With their buttery, crumbly texture and nutty flavor, these cookies are sure to be a hit with everyone who tries them. So next time you're looking for a sweet treat, give these pecan sandies a try.
