GRILLED POTATOES
When it is hot outside, who wants to heat up the oven and the house. These are great to go along side with any meat or fish dish. I clipped this recipe out of a Taste of Home Magazine. Updated 7/25/11, I now have made the recipe and the whole family loved the potatoes this way. I also added onion, but the recipe doesn't call for it. To really make it easy, I used "Simply Potatoes" already peeled and sliced potatoes, and used an 8"x8" foil pan; so quick and simple, yet so flavorful.

BAKED POTATOES ON THE GRILL
This is a recipe I use to throw a potato on the grill while I am grilling. I like how it makes the skin crispy and the center soft. Use whatever toppings you like, as in butter, sour cream, cheese, and bacon bits.

Tips for Perfect Grilled Potatoes:
- Choose the right potatoes: Waxy potatoes like Yukon Gold or Red Potatoes hold their shape well on the grill. Russet potatoes can also be used, but they may fall apart more easily.
- Cut the potatoes evenly: This will help them cook evenly. For smaller potatoes, cut them in half or quarters. For larger potatoes, cut them into 1-inch cubes.
- Parboil the potatoes: This will help them cook more quickly on the grill and prevent them from burning. Bring a pot of water to a boil and add the potatoes. Boil for 5-7 minutes, or until they are tender when pierced with a fork. Drain the potatoes and let them cool slightly.
- Season the potatoes: Drizzle the potatoes with olive oil and sprinkle them with salt, pepper, and any other desired seasonings. You can also add herbs like rosemary or thyme for extra flavor.
- Grill the potatoes: Preheat your grill to medium-high heat. Grill the potatoes in a single layer for 10-12 minutes per side, or until they are tender and slightly charred.
- Serve immediately: Grilled potatoes are best served hot off the grill. They can be enjoyed on their own or with your favorite dipping sauce.
Conclusion:
Grilled potatoes are a delicious and versatile dish that can be enjoyed as a side dish or main course. With these tips, you can easily grill perfect potatoes every time. Experiment with different seasonings and toppings to create your own unique grilled potato recipe. You can also parboil the potatoes ahead of time and store them in the refrigerator for later grilling. This makes them a great option for busy weeknights. So fire up your grill and enjoy the smoky flavor of grilled potatoes!
