BEST EVER RICE CUSTARD PUDDING

Best Ever Rice Custard Pudding image

Comforting and delicious - easy to make, well worthwhile. I've added a couple of extra ingredients from the original - vanilla essence and nutmeg.

Provided by zeeland55

Categories     Dessert

Time 50m

Yield 4-6 serving(s)

Number Of Ingredients 8

1 cup cooked rice
2 eggs
2 cups whole milk
1/8 teaspoon salt
4 tablespoons sugar
1 pinch nutmeg (optional)
1 dash vanilla essence (optional)
3/4 cup raisins (optional)

Steps:

  • Beat eggs and salt a little, add sugar then milk with splash of vanilla essence (optional). Put rice or sago in a buttered dish, pour over the egg mixture and sprinkle with a pinch of nutmeg (optional). Set in a dish of water and bake slowly in the oven at 160 c (325F) until custard sets.
  • Extra Info: The milk in New Zealand is not watered down, still has cream in it, making it a creamy rice pudding. If not in NZ or Australia, then you can use Half and Half. I also add sultanas (raisins) to this recipe on occasion, which I cook to plump, with the rice beforehand. Sometimes I dot the top of the rice pudding with knobs of butter in order to get a brown skin.

BEST EVER EASY SPANISH RICE

Best Ever Easy Spanish Rice image

My wife says this is the best Spanish Rice ever, thus the name. This is a simple compliment to any Mexican-style meal, or any meal for that matter. The secret? Jasmine rice instead of the typical long-grain rice.

Provided by kittycatonline.com

Categories     Low Protein

Time 25m

Yield 4 , 4 serving(s)

Number Of Ingredients 5

1 cup jasmine rice (uncooked)
2 cups water
1 tablespoon olive oil
2 cups water
1 knorr caldo de tomate bouillon cube (or similar Tomato Bouillon with Chicken Flavor cube)

Steps:

  • In a microwave-safe dish (I use a 2-cup Pyrex measuring cup), add 2 cups water and 1 Knorr Caldo de Tomate bouillon cube. Microwave for 2 minutes to heat water. Use a wooden spoon to carefully crush and mix the cube of bouillon in the water. It does not have to be perfectly mixed in, but you do want to get it dissolved.
  • In a 4-quart or larger saucepan on medium-high heat, add 1 tablespoon olive oil.
  • Add uncooked jasmine rice and to the pan, and stir constantly until rice is browned slightly. This should take about 1 minute.
  • Add the water carefully, and bring to a boil.
  • Cover saucepan, reduce heat to low, and cook for 20 minutes.
  • At the end of cooking, fluff rice with a wooden spoon. If the rice looks too damp, leave uncovered and allow to cook for a few more minutes while stirring to prevent burning.

BEST EVER FRIED RICE

Best Ever Fried Rice image

This recipe comes from Cooking Light, September 2005 and is without a doubt the best fried rice I have ever tasted. Not only great tasting but very easy to make as well. I have modified the original recipe slightly to reflect our preferences for oil, meat, veggies etc. The original recipe calls for shredded lettuce as an ingredient however I have never tried it this way. I will list it as an optional ingredient. The sesame oil is the secret ingredient as far as I am concerned!! Don't be shy, give it a try!!

I am not a fan of rice pudding. I was never able to stand the texture of it, but about 16 years ago I saw this made on tv and just had to try it. I am now crazy for rice pudding but only if made like this:) Everyone loves it and my family asks for it especially during the colder months when a warm bowl just hits the spot! I hope...

MY RICE DIET: BEST DIET TOOL EVER, GUARANTEED!

My Rice Diet: Best Diet Tool Ever, Guaranteed! image

I have been on and off diets for years, but the one thing that has always worked for me was my rice diet. It may seem a little weird at first, but I promise you that eventually you will love it and crave it for dinner. I had this rice every night for dinner for about 3-4 months and lost about 30 pounds. Trust me, it is worth it in the long run, and actually really tasty!!! Can use regualr white rice, brown rice, or my favorite: long-grain white rice!

Provided by Chef Sunshine

Categories     One Dish Meal

Time 17m

Yield 1 cup, 1 serving(s)

Number Of Ingredients 7

1 cup instant long grain white rice
2 -4 tablespoons prepared mustard
10 slices jalapeno peppers
1/2 tomatoes, sliced & diced
2 -4 tablespoons A.1. Original Sauce (or its generic version that is cheaper and sold at Food City preferrably)
1 tablespoon kraft fat free ranch dressing
pepper

Steps:

  • Bring 1 cup water to a boil and add 1 cup rice.
  • Let stand for 10-12 minutes. (*with this step, I usually put the rice on a plate and put it in the microwave for about 45 seconds to get it good and hot so the rice doesn't get cold half way through dinner*).
  • Remove from microwave.
  • Mix mustard into half of the rice on the plate till rice is saturated/completely covered.
  • Add about 10 slices of jalapenos to the mustard rice. Slices are as big as nickels; and cut the slices in halfs and fourths if you prefer it this way; those things are hot!
  • Can also add sliced & diced tomatoes, or just use tomatoes, or just use the jalapenos.
  • Now, add enough A1 sauce to saturate the remaining rice.
  • Add pepper to all of rice (optional).
  • You should have one half of the plate being the mustard half, while the other half is the A1 half.
  • On a little corner of the plate add about a tablespoon or two of the fat free Kraft ranch; When taking a bite of either the Mustard and jalapeno side, or the A1 side, a tiny little dip into this ranch makes this meal perfection!

BEST-EVER RICE PUDDING

BEST-EVER RICE PUDDING image

Yield 6

Number Of Ingredients 6

4-2/3 cups whole milk
1/2 cup white rice, such as Carolina long grain, basmati, jasmine or arborio
7 Tablespoons granulated sugar
1 vanilla bean
1 three inch cinnamon stick
2 large egg yolks

Steps:

  • In a 4-quart saucepan, combine 4 cups of the milk with the rice and sugar. With a pairing knife, split the vanilla bean lengthwise, scrape out the seeds, and add them to the pan. Add the scraped vanilla bean and the cinnamon stick and bring the mixture to a boil over medium heat. Reduce the heat as necessary to maintain a simmer and cook, stirring frequently but gently, until the rice is completely tender, about 25 minutes. Remove the pan from the heat. In a medium bowl, whisk the egg yolks until smooth. Whisk in about 1 cup of the hot rice mixture. Pour the egg mixture back into the pan, add the remaining 2/3 cup milk, and stir with a wooden spoon until thoroughly blended. Put the pan over medium heat and cook, stirring constantly, just until the mixture begins to boil, about 2 minutes. Transfer the rice pudding to a bowl and place a piece of plastic wrap directly on its surface. Set the bowl in an ice bath to cool the pudding quickly. When cool, discard the cinnamon stick and the vanilla bean. Divide the pudding among 6 small bowls or ramekins, cover with plastic wrap and refrigerate for at least 3 hours before serving.

Tips:

  • Use the right type of rice. Different types of rice have different cooking times and textures. For example, long-grain rice, like basmati or jasmine, is best for dishes where you want the rice to be fluffy and separate. Short-grain rice, like sushi rice or arborio, is best for dishes where you want the rice to be sticky and creamy.
  • Rinse the rice before cooking. This helps to remove starch from the rice, which can make it gummy. Rinsing the rice also helps to prevent the rice from sticking together.
  • Use the right amount of water. The amount of water you use will depend on the type of rice you are cooking. As a general rule, you should use 1 1/2 cups of water for every cup of rice.
  • Bring the water to a boil before adding the rice. This helps to ensure that the rice cooks evenly.
  • Reduce the heat to low and cover the pot. This will help to create a steamy environment that will cook the rice evenly.
  • Cook the rice for the recommended amount of time. The cooking time will vary depending on the type of rice you are cooking. Be sure to check the package directions for the specific cooking time.
  • Let the rice rest before serving. This will help the rice to absorb any remaining moisture and become fluffy.

Conclusion:

Cooking perfect rice is a skill that anyone can master with a little practice. By following the tips above, you can cook delicious, fluffy rice every time. So next time you're making a meal, don't be afraid to try cooking rice. You might just be surprised at how easy it is!
