This is from "The Frugal Gourmet Celebrates Christmas". I made the entire "Swedish Winter Feast" for a past Christmas and it was wonderful! I'll post the other recipes next. The whole meal is: Swedish Corned Pork Roast, Swedish Sauerkraut, Swedish Green Split Peas with Bacon, Mashed Rutabaga, Turnip, and Potato & Sweet and Hot Mustard, served with Rye Bread. I expected not to like anything and ended up LOVING everything! This is an excellent mustard. It will keep for a week refrigerated.

Tips:

  • Choose the right type of mustard: For a sweet and hot mustard, use a variety of mustard that is naturally sweet, such as honey mustard or brown mustard. Dijon mustard can also be used, but it will have a sharper flavor.
  • Use molasses or honey for sweetness: Brown sugar can be used for a more subtle sweetness, while maple syrup or agave nectar can be used for a more pronounced sweetness.
  • Add heat with chili peppers: Fresh or dried chili peppers can be used to add heat to the mustard. For a milder mustard, use fewer chili peppers or remove the seeds. For a hotter mustard, use more chili peppers or leave the seeds in.
  • Balance the flavors: Taste the mustard as you go and adjust the ingredients until you have a flavor that you like. If the mustard is too sweet, add more chili peppers or vinegar. If the mustard is too hot, add more honey or molasses.
  • Let the mustard sit for a while: The flavors of the mustard will meld together and deepen over time. Let the mustard sit for at least 30 minutes before using it.

Conclusion:

Sweet and hot mustard is a versatile condiment that can be used on a variety of foods. It is perfect for sandwiches, hot dogs, chicken, and fish. It can also be used as a dipping sauce for vegetables or crackers. With a few simple ingredients, you can make your own sweet and hot mustard at home. Experiment with different ingredients and flavors to create a mustard that you love.
