Time 10m

Yield 4 servings

Number Of Ingredients 14

2 cups fresh mixed mesclun greens
2 tablespoons red wine vinegar
2 tablespoons extra-virgin olive oil
Salt and pepper
Assorted large and small heirloom tomatoes, sliced or quartered
Creamy Chive Dressing, recipe follows
Point Reyes blue cheese, crumbled
Whole chives, for garnish
3 tablespoons red wine vinegar
1 tablespoon fresh lemon juice
1 heaping tablespoon prepared mayonnaise
1/4 cup chopped fresh chives
Salt and freshly ground black pepper
1/2 cup canola oil

Steps:

  • Place greens in a bowl and toss with the vinegar and oil and season with salt and pepper. Transfer to a platter. Arrange tomatoes over greens, sprinkle with salt, and drizzle with chive dressing. Sprinkle blue cheese over top and garnish with a few fresh chives.
  • Combine all ingredients in a blender and blend until smooth.

Tips:

  • Use high-quality ingredients: Fresh herbs, good quality blue cheese, and tangy buttermilk will make a world of difference in the flavor of your dressing.
  • Don't over-process the dressing: A few pulses in a blender or food processor will do the trick. Over-processing will make the dressing too thick and creamy.
  • Let the dressing chill for at least 30 minutes before serving: This will allow the flavors to meld and develop.
  • Use the dressing on a variety of salads: This dressing is great on classic green salads, as well as salads with grilled chicken, steak, or fish.
  • Experiment with different herbs: Try using fresh chives, parsley, or tarragon in place of the dill.

Conclusion:

Blue cheese and chive dressing is a delicious and versatile dressing that can be used on a variety of salads. It's easy to make and can be tailored to your own taste preferences. So next time you're looking for a new salad dressing, give this one a try!
