  • Using a zip-loc bag and a rolling pin, crush pretzels. Add to a mixing bowl.

4 cups fresh blueberries or 1 (16 ounce) package frozen blueberries
2 tablespoons lemon juice
1/2 cup packed light brown sugar
2 teaspoons cornstarch
3/4 cup quick-cooking oats
1/2 cup all-purpose flour
1/2 cup packed light brown sugar
1 dash salt
1/3 cup butter, cubed or sliced thinly
vanilla ice cream

Steps:

  • Toss blueberries with the lemon juice in an ungreased 1-1/2 quart casserole dish.
  • Mix 1/2 cup brown sugar with 2 teaspoons cornstarch; stir into the blueberries.
  • Mix oats, 1/2 cup flour, 1/2 cup brown sugar and salt together; cut in butter with a fork.
  • Sprinkle over blueberries.
  • Bake uncovered in 350° oven until topping is light brown and blueberries are bubbling, about 40 minutes.
  • Serve warm with ice cream.

1 1/4 cups graham cracker crumbs
3 tablespoons sugar
1/3 cup butter
8 ounces Cool Whip
8 ounces cream cheese, room temperature
1 cup sour cream
1/3 cup sugar
21 ounces blueberry pie filling or 21 ounces cherry pie filling

Steps:

  • Mix the 1st 3 ingredients together and bake for 8 minutes in a 9x13 baking pan at 325 degrees.
  • Cool.
  • Beat together the cream cheese, sour cream and sugar.
  • Fold in the cool-whip.
  • Spread over the cooled crust.
  • Top w/cherry or blueberry pie filling.
  • Refrigerate for two hours before serving.
