Time 3h

Yield 4 servings

Number Of Ingredients 4

2 tablespoons minced crystallized ginger
3 green-tea bags, or 2 tablespoons loose green tea
1/4 cup honey, or more to taste
Juice of lemon

Steps:

  • Put the ginger in a saucepan with 3 cups of water and bring almost to a boil, add the tea, cover and turn off the heat. Let sit for 10 minutes, then strain and discard the solids. Stir in the honey and lemon juice and taste. You want a fairly sweet mixture, so add more honey if necessary.
  • Pour the mixture into a shallow glass or ceramic pan and freeze. Stir to break up the ice every 30 minutes or so, until the mixture is slushy and crunchy with crystals, about 3 hours total. If the mixture becomes too hard, pulse it once or twice in the food processor to break it up, or put it in the fridge and stir occasionally until it reaches the desired texture. Spoon into small bowls and serve.

Yield Makes 4 servings

Number Of Ingredients 7

1 pint blueberries
1/2 cup water
8 basil leaves
Juice of 1 lime
4 teaspoons honey
1/4 teaspoon salt
4 sprigs of fresh basil

Steps:

  • Blend blueberries, water, basil, lime juice, honey and salt in a food processor or blender until smooth. Place in an airtight container and freeze until slushy, at least 2 1/2 hours. Divide among 4 glasses and serve with a sprig of fresh basil.

Tips:

  • Use fresh or frozen blueberries. Fresh blueberries will give you the best flavor, but frozen blueberries are a good option too. Just be sure to thaw them before using.
  • Add sugar to taste. The amount of sugar you add will depend on how sweet you like your granita. If you're using tart blueberries, you may need to add more sugar.
  • Grate the ginger fresh. Fresh ginger has a much more intense flavor than ground ginger. If you don't have fresh ginger, you can use 1/2 teaspoon of ground ginger.
  • Freeze the granita in a shallow dish. This will help it freeze evenly. If you freeze it in a deep dish, the top layer will freeze before the bottom layer.
  • Stir the granita every 30 minutes or so. This will help to break up the ice crystals and create a smooth texture.
  • Serve the granita immediately. It will start to melt quickly, so it's best to enjoy it right away.

Conclusion:

Blueberry ginger granita is a refreshing and delicious summer treat. It's easy to make and can be enjoyed by people of all ages. The combination of sweet blueberries and spicy ginger is a perfect balance of flavors. Whether you're serving it at a party or enjoying it on your own, blueberry ginger granita is sure to be a hit.
