2 cups water
½ cup vegetable oil
1 cup cold water
2 cups white sugar
4 cups all-purpose flour

Steps:

  • Boil raisins in 2 cups of water for 15 minutes. Remove from heat.
  • Add vegetable oil and cold water to the raisins.
  • Mix sugar, flour, spices, baking soda, and salt in a large bowl.
  • Add the raisin mixture, and stir till just mixed.
  • Pour into a greased and floured 9 x 13 inch baking pan, and bake for one hour in a preheated 350 degrees F (175 degrees C) oven. It is done if a toothpick comes out clean.

1 cup water
4 cups candied mixed fruit
1 cup white sugar
¾ cup butter
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon mixed spice
2 eggs, beaten

Steps:

  • Preheat the oven to 300 degrees F (150 degrees C). Grease a 9x5 inch loaf pan, and line with parchment paper or aluminum foil.
  • Combine the water, mixed fruit, sugar and butter in a saucepan over medium heat. Bring to a boil, stirring occasionally, and boil gently for about 10 minutes. Sift the flour, baking soda and mixed spice into a large bowl. Pour in the boiled mixture, and stir until well blended. Mix in the eggs. Pour into the greased loaf pan.
  • Bake for 90 minutes in the preheated oven, until a skewer or knife inserted into the top comes out clean. Cool cake in the pan for at least 10 minutes before removing.

1 cup raisins
1 ½ cups water
1 egg
2 cups all-purpose flour
1 cup white sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg

3 teaspoons boiling water
½ teaspoon vanilla extract
½ cup butter, melted
1 cup confectioners' sugar
⅓ cup milk
1 teaspoon ground cinnamon

Steps:

  • Heat oven to 325 degrees(165 degrees C). Grease a 9 x 5 inch pan. Set aside.
  • In 3 quart saucepan, boil raisins slowly water until there is 1 cup of water left and the raisins are plump. Allow mixture to cool.
  • Stir in sugar and egg. Mix spices with boiling water and add to raisin mixture. Add flour, soda, vanilla and last, the melted shortening. Blend well. Pour into loaf pan.
  • Bake for 40 to 50 minutes. When cool make glaze by mixing confectioners sugar, ground cinnamon, and milk. Spread on top of cooled cake.

This recipe was in a box of loose recipes I'd cut out of magazines and newspapers. I'm posting it here so it won't get lost. See NOTE at bottom of recipe if you don't have pastry flour. UPDATE-- Made this today. It didn't rise much, maybe it's not supposed too. I did use pastry flour. The flavor is wonderful. I dropped the salt down to 1/2 teaspoon, and used butter instead of shortening. There's less than 1/2 left it was so tasty.

1 teaspoon salt

Special Equipment
a 10-inch tube pan (4 1/2 inches high; without a removable bottom)

Steps:

  • Gently boil coffee, raisins, currants, orange peel, sugars, nutmeg, and butter over moderate heat, uncovered, in a 3-quart heavy saucepan, stirring occasionally, 5 minutes. Cool mixture to room temperature, stirring occasionally, about 1 hour.
  • Put a small roasting pan filled halfway with hot water on rack in lowest position in oven (to provide moisture during baking). Put remaining oven rack in middle position and preheat oven to 350°F. Generously butter tube pan.

Steps:

  • Thoroughly grease bottom and sides of a 2-quart heat proof mold or 9 inch bundt pan. Sprinkle with white sugar and tap out excess.
  • n large mixer bowl, beat butter, sugar and vanilla until light and fluffy. Add eggs and blend well.
  • In separate bowl, stir together flour, cocoa, cinnamon and baking soda; add to butter mixture alternately with milk until well blended. Stir in the chopped nuts.

Remove mold from kettle; cool 10 minutes on wire rack. Run tip of sharp knife around edges; invert on serving plate. Serve hot accompanied with sauces of your choice.

1 cup walnuts (coarsely chopped)

Steps:

  • Boil sugar, shortening, raisins, salt, and water (do not boil dates). Add dry ingredients, dates and walnuts to the boiled mixture. Bake at 325* in (2) 8"x8"x2" pans or in (1) 13"x9"x2" pan for 60-75 minutes. Allow to cool and divide into 4 "loaves". Wrap well and store. Serve sliced and plain or with hard sauce. 375 g mixed dried fruit
50 g glace cherries
1 tablespoon mixed peel (optional)
125 g butter
1 teaspoon bicarbonate of soda
3/4 cup water
1/4 cup brandy
1 cup brown sugar
2 eggs
1 cup plain flour
1 cup self-rising flour
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon clove
1/2 teaspoon cardamom
1/4 teaspoon mace
1 pinch salt

Steps:

  • Place dried fruit, mixed peel, cherries, water, brandy, sugar and butter in pan.
  • Heat gently, bring the boil and simmer for 5 minutes.
  • Take of heat and add the bicarb soda, stirring through, mixture will foam up a bit. Leave until cold.
  • Sift flours and spices.
  • Mix the eggs through the fruit mixture, then combine with dry ingredient.
  • Pour into a lined 18cm square cake pan or 18cm round cake pan.
  • Wet your hand and flatten top of cake.
  • Bake at 150C for 1 hour.
  • Cool in pan covered with a tea towel.

1 c shortening, butter flavor
2 c sugar
2 c water
1 tsp baking soda
1 tsp salt
1 tsp allspice, ground
1 tsp nutmeg
1 tsp cloves, ground
2 tsp cinnamon, ground
1 c raisins
3 c unbleached white flour
1 c chopped walnuts, plus 3 halves for each cake
1/8 c brandy (opt.)
VANILL SAUCE:
1 c milk
1/2 c plus 2 tbsp sugar
2 large egg yolks
2 Tbsp sugar
1 tsp vanilla extract
1 Tbsp butter

Steps:

  • 1. Boil sugar, shortening, water, raisins and spices for 5 minutes; remove from heat and let cool completely.
  • 2. Mix dry ingredients together; add to cooled mixture stirring by hand.
  • 3. Preheat oven to 375 degrees. Pour cake mixture into a large greased and floured loaf pan or 3 smaller aluminum loaf pans and place walnut halves across the top of cake(s). Bake for 1 hour, stick a toothpick in center of cake, if it comes out wet bake for an additional 10 minutes. Cool; pour brandy over the top of the cake and cover with aluminum foil. Let sit in a dark place for at least 3 months for the raisins to ferment.
  • 4. For Vanilla Sauce: Bring milk and 1/2 cup sugar to a boil, stirring until sugar is dissolved.
  • 5. Beat yolks and 2 Tbsp sugar together until light and lemon-colored.
  • 6. Remove pan from heat and pour milk over eggs, stirring vigorously. Pour milk mixture into pan and heat, without boiling, until thickened.
  • 7. Remove from heat; add vanill and butter and stir.
  • 8. NOTE: This cake will keep for quite awhile. If it should become hard around the edges, just make the vanilla sauce and pour over it.

1 cup chopped dates
1/2 teaspoon cinnamon

2 1/4 cups self-raising flour, sifted

Steps:

  • Combine butter, milk, sugar, dates and spices in a pan, stir over heat until butter is melted, bring to boil, remove from heat, stir in soda, stand 5 minutes.

  • 1. Preheat oven to 180oC/375oF. Well grease and line a 30 x 30 cm cake tin (about 10 inch x 10 inch).
  • 2. In a sauce pan bring the water, oil, butter and cocoa to the boil. Stir well and cool for 20 minutes.
  • 3. In a large bowl add the remaining ingredients and beat. Add the cooler cocoa mix and beat. Pour into the prepared pan and bake in the preheated oven for 50 - 60 minutes.
  • 4. Cool in the pan for 15 minutes, then transfer to a wire rack to cool completely. Top with desired icing or frosting. Keep in a Tupperware style container for up to 3 or 4 days.

13 ounce (375g) bag of dried mixed fruit
5 ounces (125g) fine minced ginger
14 ounce tin (400g tin) crushed pineapple
1/2 cup strong tea
1/2 cup butter, cut up
1 cup brown sugar
1 teaspoon bicarb mixed with 1 tablespoon boiling water
2 eggs, lightly beaten
2 1/4 cups gluten free flour mix
1 teaspoon gluten free baking powder
1 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1/2 teaspoon mixed spice
blanched almonds to top

Steps:

  • 1. In a medium bowl, place the dried fruit, ginger and drained pineapple (reserve 3/4 cup of juice for later) mix and cover. Stand overnight.
  • 2. The next day: In a saucepan, place the fruit, tea, butter and sugar. Bring to the boil and remove from the heat. Mix in the bicarb with the boiling water and and stir through. Cool the mixture.
  • 3. Pre-heat oven to 320oF/160oC and well grease and line an 8 inch (20 cm) square cake tin.
  • 4. To the now cooled mixture, add the eggs, reserved pineapple juice and sifted flour, spices and baking powder. Stir well.
  • 5. Gently pour into the prepared tin. Bake for 90 minutes or until a skewer comes out clean. Cool cake COMPLETELY in the tin.
  • 6. Once cold, remove cake from tin and wrap in aluminum foil and store in an air tight container for up to 2 weeks. To serve, slice as needed and return to the foil and well seal.
