Rice Pilaf image

This Rice Pilaf is simple, fluffy, and flavorful, and a good side dish for Chicken, Beef, Pork, and more.

Provided by Joanne Ozug

Categories     Side Dish

Time 35m

Number Of Ingredients 5

2 cups long grain white rice ((I think jasmine and basmati are best))
2 tbsp butter ((or olive oil*))
1/2 cup chopped shallots
1/4 + 1/4 tsp salt
3 cups chicken stock

Steps:

  • Place the rice in a strainer, and rinse well for 2 minutes.
  • Add the butter, shallots, and 1/4 tsp salt to a nonstick pan (use one that has a lid), and cook for 5 minutes, until slightly softened.
  • Add the rinsed rice and toast for 3-5 minutes, stirring often, until the grains turns chalky and opaque.
  • Add the chicken stock and remaining 1/4 tsp salt, and increase the heat to high. Once the liquid reaches a boil, reduce the heat to a simmer (low heat), and cover the pan with the lid**.
  • Cook for 18-20 minutes, until the liquid has been absorbed.
  • Stir and fluff the rice, as the bottom tends to get drier than the top, replace the lid, and let the pilaf sit for 10 more minutes. Serve and enjoy!

RICE PILAF WITH LAMB, CARROTS, AND RAISINS

Rice Pilaf with Lamb, Carrots, and Raisins image

Provided by Sher Dil Qader

Categories     Lamb     Rice     Vegetable     Braise     Dinner     Raisin     Meat     Lamb Shank     Root Vegetable     Carrot     Fall     Winter     Gourmet     Wheat/Gluten-Free     Peanut Free     Tree Nut Free     Soy Free     No Sugar Added

Yield Makes 8 to 10 (main course) servings

Number Of Ingredients 8

3 cups basmati rice (7 ounces)
1 medium onion, chopped
3 tablespoons olive oil
1 1/2 pounds boneless lamb shank (from 2 1/4 pounds bone-in shanks), cut into 1 1/2- to 2-inch pieces
4 1/2 to 5 cups water, divided
2 large carrots, cut into 1/8-inch-thick matchsticks
1 cup raisins (6 ounces)
Accompaniments: chicken kebabs and cilantro garlic yogurt sauce

Steps:

  • Wash rice in several changes of cold water in a bowl until water is almost clear. Soak rice in cold water 1 hour, then drain well in a sieve.
  • While rice soaks, cook onion in oil in a wide 5- to 6-quart heavy pot over medium-high heat, stirring occasionally, until pale golden, about 5 minutes. Pat lamb dry and sprinkle with 1 teaspoon salt. Add to onion and brown on all sides, about 8 minutes total. Add 1 cup water and bring to a simmer. Cover pot and reduce heat to low, then braise lamb, stirring occasionally, until meat is tender, about 45 minutes.
  • Stir in drained rice, carrots, raisins, and 2 teaspoons salt. Add enough water to cover mixture by 1 inch (3 1/2 to 4 cups) and bring to a boil, uncovered, over medium-high heat. Wrap a kitchen towel around lid with ends of towel on top, then cover pot and boil over medium heat 10 minutes. Reduce heat to low and simmer, covered, until rice is tender and liquid has been absorbed, about 30 minutes.
  • Fluff rice with a fork and transfer pilaf to a large platter. Top with kebabs and serve with yogurt sauce.

Tips:

  • Use high-quality rice. Long-grain rice, such as basmati or jasmine, works best for pilaf. These rices have a firm texture and separate nicely after cooking.
  • Rinse the rice before cooking. Rinsing the rice removes excess starch, which can make the pilaf sticky.
  • Toast the rice before cooking. Toasting the rice in a little bit of oil or butter adds flavor and helps to prevent the rice from sticking together.
  • Use a flavorful broth. The broth you use to cook the rice will add a lot of flavor to the pilaf. Use a broth that you enjoy the taste of, such as chicken broth, beef broth, or vegetable broth.
  • Add vegetables and other ingredients. Vegetables, such as carrots, celery, and onions, are often added to pilaf. You can also add other ingredients, such as nuts, dried fruit, or meat.
  • Cook the rice until it is tender. The cooking time for pilaf will vary depending on the type of rice you are using. Cook the rice until it is tender but still has a slight bite to it.
  • Fluff the rice with a fork before serving. Fluffing the rice with a fork helps to separate the grains and make the pilaf light and fluffy.

Conclusion:

Braised pilaf rice is an easy and delicious side dish that can be served with a variety of meals. It is a versatile dish that can be customized to your own taste. With a few simple tips, you can make perfect braised pilaf rice every time.
