Baked Brie with Caramelized Pears, Shallots and Thyme image

Brie baked in a round sourdough bread bowl makes this ultimately easy! You could substitute a sweet chutney for the topping for even easier prep. I microwaved the final product for a few minutes to speed up the cooking (couldn't wait for it to be ready!)

Time 1h20m

Yield 8

Number Of Ingredients 11

1 tablespoon butter
2 shallots, thinly sliced
2 pears - peeled, cored and sliced
⅓ cup dry white wine
½ teaspoon brown sugar
½ teaspoon chopped fresh thyme
salt and pepper to taste
1 (8 ounce) round loaf sourdough bread
1 (8 ounce) round Brie cheese
½ cup slivered almonds
Assorted crackers

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt butter in a skillet over medium heat. Add shallot; cook and stir for 1 minute to soften. Add thinly sliced pears; cook until soft, about 5 minutes. • Cut a Brie-sized hole in the top of the sourdough bread to within 1/2-inch of the bottom. Cut the removed bread into pieces for serving, set aside. Score the Brie around it's edge, using a paring knife to cut 1/4-inch deep. • Place the bottom half of the Brie, cut-side-up, into the sourdough loaf. Top with 1/2 of the pear mixture and sprinkle with 1/2 of the slivered almonds. Place the remaining brie half on top, spread with remaining pear mixture, and sprinkle with remaining slivered almonds. Place on a baking sheet.
  • Bake in preheated oven for 45 minutes or until soft and gooey. Serve with sliced sourdough bread and crackers.

ROASTED AND CARAMELIZED PEARS

Roasted and Caramelized Pears image

Provided by Florence Fabricant

Categories     dessert, side dish

Time 1h30m

Yield 6 servings

Number Of Ingredients 7

1 lemon
6 Bosc pears
1 1/2 cups sugar
1 tablespoon cider vinegar
1/2 cup water
1/4 cup heavy cream
Vanilla ice cream or frozen yogurt

Steps:

  • Fill a large bowl with water and squeeze a lemon into it. Peel each pear, leaving a small crown of skin around the stem. Carefully core each, keeping pear intact. As the pears are peeled, place in the water.
  • Preheat oven to 450 degrees.
  • In large nonreactive ovenproof skillet, combine sugar, vinegar and 1/2 cup of water. Cook, without stirring, over medium heat until mixture is lightly caramelized. Remove from heat.
  • While caramel is cooking, remove pears from water, draining them well. When caramel is done, roll pears in caramel, turning them with 2 wooden spoons. Do not touch caramel. Stand pears up in the pan, place pan in oven, and roast pears about 45 minutes, basting them frequently with caramel in the pan, until they are tender and golden brown. Keep the basting spoon in a dish of warm water to prevent it from getting sticky.
  • Using wooden spoons, carefully transfer pears to a rack placed over a sheet of foil, and allow them to drain. Return skillet to top of stove, whisk in the cream and bring to a simmer. Set aside until ready to serve.
  • Serve pears with warm sauce and vanilla ice cream or frozen yogurt on the side.

CARAMELIZED PEARS WITH BLACK PEPPER-CARAMEL SAUCE

Caramelized Pears With Black Pepper-Caramel Sauce image

From America's Test Kitchen. It is amazing how simple this recipe is and the extraordinary results it yields. Impressive.

Provided by DeSouter

Categories     Dessert

Time 30m

Yield 6 serving(s)

Number Of Ingredients 7

1/3 cup water
2/3 cup sugar
3 pears, halved (ripe, medium firm)
2/3 cup heavy cream
1 dash table salt
1/4 teaspoon black peppercorns, whole roughly crushed
3 ounces blue cheese, strong cut into 6 attractive wedges (such as Stilton)

Steps:

  • Remove seeds from pear halves with a large melon baller, and trim off 1/4 inch from the bottom of each pear half so it will stand upright on a plate. Place the water in a 12-inch nonstick skillet and pour the sugar into the center of the pan, taking care not to let the crystals adhere to the sides of the pan. bring to a boil over high heat, stirring occasionally, until the sugar is fully dissolved and the mixture is bubbling wildly. Add the pears to the skillet, cut-side down, cover, reduce the heat to medium-high, and cook until the pears are nearly tender (a paring knife inserted into the center of the pears feels slight resistance).
  • Uncover, reduce the heat to medium, and cook until the sauce is golden brown and the cut sides of the pears are partly caramilzed, 3 to 5 minutes. Pour the heavy cream around the pears and cook, shaking the pan back and forth, until the sauce is a smooth, deep caramel color and the cut sides of the pears are beautifully golden 3 to 5 minutes.
  • Remove the pan from the heat. Using tongs, carefully remove the pears from the pan and place cut-side up on a wire rack set over a trimmed baking sheet. Cool slightly. Season the sauce left in the pan with salt to taste and the crushed black pepper, then pour it into a liquid measuring cup.
  • Carefully (the pears will still be hot) stand each pear half upright on an individual plate and arrange a wedge of the blue sheese beside it. Drizzle the plate and some of the pear with the caramel sauce. Serve immediately. (Alternatively, the pears can be stood upright on a large serving platter, and the warm caramel sauce and the blue cheese can be passed separately.).
  • TECHNIQUE: Coring a Pear 1. Cut the fruit in half from stem to blossom end. Use a melon baller to cut around the central core with a circular motion. 2. Draw the melon baller from the central core to the top of the pear, removing the interior portion of the stem as you go.

Time 1h45m

Yield 4 servings

Number Of Ingredients 14

3/4 cup walnuts
1/2 cup loosely packed basil leaves, stemmed, washed and dried
1/2 ounce Parmesan cheese, grated
10 tablespoons extra virgin olive oil
2 tablespoons red wine vinegar
3 tablespoons red raspberry vinegar
2 teaspoons salt, plus more to taste
Freshly ground black pepper to taste
1 1/2 cups wheat berries
1/2 cup dried currants
4 medium onions (about 1 1/2 pounds), peeled and thinly sliced
1 teaspoon lemon juice
4 medium pears (about 1 1/2 pounds)
1/2 pound arugula, stemmed, washed and dried

Steps:

  • Preheat oven to 325 degrees. Place walnuts on a baking sheet, and toast in the oven 10 minutes. Remove from oven, and let cool.
  • In a food processor, process 1/2 cup of the walnuts 10 seconds, until finely chopped. Remove to a bowl, and set aside. Place the remaining walnuts, basil leaves, Parmesan cheese and 2 tablespoons olive oil in the food processor. Process 15 seconds. Scrape down sides of bowl, and process 15 seconds more. Add 4 tablespoons olive oil, red wine vinegar and 1 tablespoon raspberry vinegar, and process 15 seconds. Transfer to a bowl, season to taste with salt and pepper, and set aside.
  • In a 5-quart saucepan, bring to a boil 2 quarts water seasoned with 2 teaspoons salt. Add wheat berries and simmer 1 hour, until they are cooked but still quite crunchy. Drain, and transfer to a large bowl. Add the currants, 2 tablespoons olive oil and 2 tablespoons raspberry vinegar; stir to combine. Season to taste with salt and pepper. Let cool 30 minutes, then stir in the reserved chopped walnuts. Set aside.
  • In a large nonstick saute pan, heat 2 tablespoons olive oil over medium heat. Add onions, and season lightly with salt and pepper. Cook 30 to 40 minutes, until golden and caramelized, stirring occasionally to prevent onions from sticking to the pan. Add 1/2 cup water to the caramelized onions, bring to a boil and then transfer onions and liquid to a large bowl.
  • While the onions are cooking, combine lemon juice with 4 cups cold water in a medium bowl. Core and quarter the pears. Slice each quarter lengthwise into 1/4-inch-thick slices, and place in the lemon water. Set aside until onions are done.
  • Drain pears in a colander, rinse under cold water and shake dry. Add pears to the onions, and stir gently to combine. Season to taste with salt. Cover with plastic wrap, and set aside for 10 minutes.
  • To assemble, place equal amounts of the wheat berry mixture in a ring shape on the outer edges of 4 plates. Place equal amounts of arugula inside each ring of wheat berries. Dress arugula and wheat berries with 2 tablespoons dressing. Place equal amounts of the pear-onion mixture on the arugula, then sprinkle pears and onions with 1 more tablespoon of dressing. Serve immediately.

SIMPLE CARAMELIZED PEARS

Simple Caramelized Pears image

This recipe for caramelized pears is a fall dessert that is both simple and sweet.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes

Time 20m

Number Of Ingredients 2

4 red Bartlett pears
1/3 cup granulated sugar

Steps:

  • Halve pears lengthwise; remove cores. (A melon baller removes cores easily, but a small spoon works, too.) Place sugar on a plate.
  • Heat a large skillet over medium. Press cut side of each halved pear in sugar. Pressing the cut sides of pears in sugar before cooking helps them caramelize. Place cut side down in skillet (fit will be snug). Cook until beginning to brown, 7 to 8 minutes.
  • Add 1/2 cup water. Cover; simmer until pears are tender, 5 to 10 minutes (depending on ripeness), adding more water if sugar begins to burn.
  • If liquid in pan is thin, simmer until thickened to a saucelike consistency; if it is thick, add more water. Serve sauce over pears.

Add the remaining vanilla pod. Warm up the half and half and vanilla on medium heat, stirring occasionally, until almost to a boil. Turn heat off and let cool and seep 20-30 minutes. (I used half and half and just added some vanilla). I used chopped pecans, untoasted. Slice pears. Melt 2 T butter in a skillet and sauté pears on medium heat until golden, about 8-10 minutes. Add 1 T maple syrup. Simmer for a few more minutes. Set aside. Cut bread in to 1/2 inch slices. In a medium bowl, beat eggs, salt, spices, orange zest and 3 T maple syrup. When half and half has cooled, remove vanilla pod, and add a little at time into the egg mixture, mixing it together. (Do NOT add hot cream to the egg mixture, unless you want your eggs to curdle. Either let the cream cool, or temper the eggs, by adding just a little warm cream at a time, mixing in-between... so the eggs gradually warm up.) Generously butter a baking dish. Layer bread, hazelnuts, and caramelized pears pouring all the buttery syrup from the pan evenly over the bread. Pour batter over, using a spatula to ensure it goes in all the cracks crevasses. Let sit at least 30 minutes, so bread can soak up batter, or refrigerate overnight. Right before placing in the oven, drizzle the top with 1 more T maple syrup and sprinkle with a pinch of cardamon. Bake @ 350 for 45-50 minutes until puffed and golden. If your layers measure higher than two inches, you may need to bake longer. Check the middle to see if all the liquid is cooked. I have found that the true test is, if it puffs up, it is done. Melt small dots butter over the top and serve with warm maple syrup.

Yield 6

Number Of Ingredients 13

1 ½ quarts water
5 tablespoons kosher salt
2 tablespoons white sugar
6 pork loin chops, 1/2 inch thick
½ cup olive oil
4 cloves garlic, minced
1 tablespoon fresh rosemary, minced
½ cup balsamic vinegar
1 tablespoon butter
1 tablespoon olive oil
2 Vidalia onions, each cut into 8 wedges
2 pears, cored and each cut into 8 wedges
1 teaspoon salt

Steps:

  • In a large bowl, stir together the water, kosher salt, and sugar. Add pork chops to this brine, and let them soak for no more than one hour. Drain and discard the brine. Pat pork chops dry with paper towels.
  • In a shallow dish, stir together the olive oil, garlic, and rosemary. Place pork chops in the dish, and turn to coat. Cover, and marinate in the refrigerator for at least 1 or 2 hours.
  • Pour the balsamic vinegar into a small saucepan. Bring to a boil, and cook until reduced by 1/2, about 10 minutes. When the vinegar cools, it should be the consistency of syrup.
  • Melt butter with olive oil in a large skillet over medium-high or high heat. Add the onions and pears, and quickly brown being careful to keep the wedges intact. Once the onions and pears are browned, reduce heat to low, and cook for about 7 minutes, or until tender. Stir in the reduced vinegar and salt. The recipe can be prepared up to this point several hours before grilling.
  • Preheat the grill for medium-high heat.
  • Warm pears on a cool section of the grill (in the skillet), while placing the pork chops over the hot part. Cook pork for about 3 minutes per side, or to desired doneness. Remove to a serving plate, cover with aluminum foil and let rest for a few minutes. Uncover, top with the pear onion sauce, and serve.

Tips:

  • Choose the right pears: Use firm, ripe pears that are not too soft or bruised. Bosc, Anjou, and Bartlett pears are all good choices.
  • Get the pan hot: Before adding the pears, make sure the pan is hot enough to caramelize the sugar. If the pan is not hot enough, the pears will release their water and become mushy.
  • Don't overcrowd the pan: If you crowd the pan, the pears will not caramelize evenly. Cook the pears in batches if necessary.
  • Be patient: Caramelizing the pears takes time. Don't rush the process or the pears will burn.
  • Use a variety of spices: Feel free to experiment with different spices to flavor the caramelized pears. Some good options include cinnamon, nutmeg, cardamom, and ginger.
  • Serve warm or cold: Caramelized pears can be served warm or cold. They are delicious on their own, or can be used as a topping for desserts such as ice cream, yogurt, or pancakes.

Conclusion:

Caramelized pears are a delicious and versatile dessert that can be enjoyed in many ways. With a little patience and attention to detail, you can easily make caramelized pears at home. So next time you are looking for a special treat, give caramelized pears a try. You won't be disappointed!
