Steps:
- In a large, heavy bottom saucepan over medium heat add the butter and leeks and cook until the leeks are tender, 5 to 7 minutes. Once the leeks are tender add the flour, stirring well and cook until all of the flour has been incorporated. Add the stock, cauliflower and the potato and bring the mixture to a boil. Once boiling, reduce the heat to medium-low and simmer for 15 to 20 minutes. Remove from the heat, and let cool for about 5 minutes. Add the soup, in batches, to a food processor or blender and puree. Return the soup to the original saucepan over medium-high heat, add the cream and bring to a simmer. Reduce the heat to low and simmer for 10 to 12 minutes to allow the soup to thicken. Stir in the sage. Ladle the soup into serving bowls and garnish with tarragon or chives.

Sorrel -- a tart spring herb rich in vitamins A and C -- paired with garlic for an elegant soup. A bulb of garlic may seem like a lot, but the flavor mellows as the soup cooks.

SLOW-COOKER CREAMY CAULIFLOWER SOUP

Tips:
- Choose the right cauliflower: Select a head of cauliflower that is compact and heavy for its size, with tightly closed florets. Avoid heads with brown spots or bruises.
- Prepare the cauliflower properly: Cut the cauliflower into small florets and remove the tough core. Rinse the florets thoroughly under cold water to remove any dirt or debris.
- Use fresh sorrel: Fresh sorrel has a bright, lemony flavor that is essential to this soup. If you can't find fresh sorrel, you can substitute arugula or spinach, but the flavor will be slightly different.
- Don't overcook the soup: The cauliflower should be tender but still slightly firm. Overcooking will make the soup mushy.
- Season the soup to taste: Add salt, pepper, and nutmeg to taste. You can also add a squeeze of lemon juice or a dollop of crème fraîche for extra flavor.
Conclusion:
Cauliflower and sorrel soup is a delicious and healthy soup that is perfect for a light lunch or dinner. It is packed with nutrients and has a unique, tangy flavor. This soup is also very versatile and can be easily customized to your liking. For example, you can add other vegetables, such as carrots, celery, or potatoes. You can also add a protein source, such as chicken, shrimp, or tofu. No matter how you choose to make it, cauliflower and sorrel soup is a delicious and satisfying meal.
