Steps:
- Puree cherries in processor until almost smooth but some small pieces remain. Transfer to bowl. Add kirsch and let stand at room temperature 1 hour.
- Place ice cream in large bowl. Stir in cherry mixture and chocolate. Cover and freeze until firm, about 4 hours.
Tips:
- Use fresh, ripe cherries: This will ensure the best flavor in your ice cream. If you can't find fresh cherries, you can use frozen cherries that have been thawed and pitted.
- Chop the cherries into small pieces: This will help them distribute evenly throughout the ice cream. If you leave the cherries whole, they may freeze solid and become difficult to chew.
- Use high-quality chocolate chunks: This will also make a big difference in the flavor of your ice cream. Look for chocolate chunks that are made with semisweet or bittersweet chocolate.
- Chill the ice cream base before churning: This will help the ice cream freeze more quickly and smoothly. You can chill the base in the refrigerator for at least 4 hours, or overnight.
- Churn the ice cream according to the manufacturer's instructions: Each ice cream maker is different, so be sure to follow the instructions that came with your machine.
- Transfer the ice cream to a freezer-safe container and freeze for at least 4 hours: This will allow the ice cream to firm up completely.
