CHERRY DUMPLINGS
I can't remember where I got this - probably on an internet search when we had ripe cherries and I wanted to make something other than cherry pie. I've also made this in the dead of winter using a bag of mixed berries. I added the almond extract and cinnamon to the original recipe.

Steps:
- 1. Mix the cherries, sugar, cinnamon and almond extract in a deep pot that has a lid. Bring the mixture to a simmer over med heat.
- 2. In a large bowl whisk together the flour, baking soda and salt. Cut in 3 tablespoons Crisco until the mixture is crumbly
- 3. Beat together the egg, vanilla extract and milk. Stir GENTLY into the dry ingredients just until incorporated.
- 4. Drop the dough by a spoon onto the bubbling cherry mixture. Cook 10 minutes without the lid. Cover the pan and cook 10 minutes more.
Tips:
- Use fresh cherries: Fresh cherries are plump, juicy, and have a vibrant flavor. If you can't find fresh cherries, frozen cherries can be used, but they should be thawed and drained before using.
- Pit the cherries: Pitting the cherries before cooking is essential. This can be done using a cherry pitter or by hand. If using a cherry pitter, be sure to remove all of the pits, as even a small pit can be a choking hazard.
- Sweeten the cherries: Cherries can be sweetened with sugar, honey, maple syrup, or another sweetener of your choice. The amount of sweetener you use will depend on your personal preference and the tartness of the cherries.
- Add a little spice: A pinch of cinnamon, nutmeg, or cloves can add a warm, cozy flavor to your cherry dumplings. You can also add a splash of almond extract or vanilla extract for a more complex flavor.
- Don't overcook the dumplings: Cherry dumplings should be cooked until the dumplings are cooked through and the cherries are tender, but not mushy. Overcooking the dumplings will make them tough and dry.
Conclusion:
Cherry dumplings are a delicious and easy-to-make dessert that can be enjoyed all year long. Whether you're using fresh or frozen cherries, there's a recipe in this article that's perfect for you. So next time you're looking for a sweet treat, give cherry dumplings a try. You won't be disappointed!
