GARDEN MINT JELLY WITH A HINT OF GARLIC

Garden Mint Jelly With a Hint of Garlic image

My mint has gone crazy this year so am trying to save some for the winter months, this was a mixture of several recipes plus a few bits of my own and it is DELICIOUS, even DH who hardly ever comments asked me to make more! I put only a hint of chilli in but feel free to add more if that is to your taste. This would be great with a hot curry I think. This Jelly will be a very dark green colour, just from the mint.

Tips:

  • Use fresh, ripe chilies for the best flavor. If you can't find fresh chilies, you can use dried chilies, but be sure to soak them in hot water for at least 30 minutes before using.
  • Wear gloves when handling chilies, as the capsaicin can irritate your skin.
  • Use a sharp knife to mince the chilies. This will help to prevent the seeds from spreading and making the jelly too hot.
  • If you want a sweeter jelly, add more sugar. If you want a spicier jelly, add more chilies.
  • Be careful not to overcook the jelly, as this can make it tough and chewy.
  • Store the jelly in a clean, airtight container in the refrigerator for up to 2 weeks.

Conclusion:

Chili mint jelly is a versatile condiment that can be used in a variety of ways. It's perfect for glazing grilled meats, drizzling over ice cream, or simply spreading on toast. With its sweet, spicy, and minty flavor, chili mint jelly is sure to add a unique and delicious touch to your next meal.
