Tips:

  • Prawn Selection: Choose large, fresh prawns for the best results. Look for prawns with a firm texture and a shiny, translucent appearance. Avoid prawns that are discolored or have a slimy texture.
  • Marinating the Prawns: Marinating the prawns in the Shaoxing wine, ginger, garlic, and scallions helps to infuse them with flavor and tenderize them. Be sure to marinate the prawns for at least 30 minutes, or up to overnight for even more flavor.
  • Cooking the Prawns: When cooking the prawns, use a large skillet or wok over high heat. This will help to quickly sear the prawns and prevent them from overcooking. Be careful not to overcrowd the pan, as this will also prevent the prawns from cooking evenly.
  • Sauce Ingredients: Use high-quality Shaoxing wine, soy sauce, and Chinese black vinegar. These ingredients are essential for achieving the authentic flavor of Chinese Drunken Prawns. If you can't find Chinese black vinegar, you can substitute balsamic vinegar or rice vinegar.
  • Garnish: Garnish the finished dish with chopped scallions and cilantro. This will add a pop of color and freshness.

Conclusion:

Chinese Drunken Prawns is a delicious and easy-to-make dish that is perfect for any occasion. The combination of flavors from the Shaoxing wine, ginger, garlic, and scallions creates a truly unforgettable dish. Serve this dish with steamed rice or noodles for a complete meal.
