Steps:

  • Evenly position 2 racks in the middle of the oven and preheat to 350 degrees F. Line 2 baking sheets with parchment.

Nonstick vegetable oil spray (optional)
1/3 cup granulated sugar
5 tablespoon unsalted butter
3/4 cup all-purpose flour
1/2 teaspoon kosher salt
1/4 teaspoon baking soda
1/3 cup (packed) light brown sugar
1 large egg yolk
1 teaspoon vanilla extract
1/3 cup bittersweet chocolate wafers (disks, pistoles, fèves) or chocolate chips
Flaky sea salt

Steps:

  • Place racks in upper and lower thirds of oven; preheat to 350°F. Toast almonds on a rimmed baking sheet on upper rack, tossing halfway through, until slightly darkened in color and fragrant, 6-8 minutes. Let cool.
  • Gather almonds into a tight pile on a nonstick silicone baking mat or a rimmed baking sheet coated with nonstick spray. Cook granulated sugar in a small saucepan over medium heat, undisturbed, until it begins to liquefy and turn golden brown around the edges. Use a heatproof rubber spatula to incorporate melted sugar into unmelted sugar and continue to cook, stirring occasionally, until all sugar is melted and caramel turns a medium amber color, 6-8 minutes. Carefully pour caramel over almonds and let cool.
  • Break almond mixture into large pieces and transfer to a food processor. Process, scraping down sides occasionally, until praline paste is very smooth and creamy (it should be as smooth as peanut butter with a slightly oily sheen; this takes time, so be patient), 12-16 minutes.
  • Cook butter in a medium skillet over medium heat, swirling occasionally, until it foams, then browns, about 5 minutes. Let cool until just warm.
  • Whisk flour, kosher salt, and baking soda in a medium bowl. Using an electric mixer on medium-high speed, beat brown butter, praline paste, and brown sugar in a large bowl until mixture is smooth, about 2 minutes. Reduce speed to medium, add egg yolk and vanilla, and beat just to combine. Reduce speed to low and gradually add dry ingredients. Mix until mostly combined. Using a wooden spoon, mix in chocolate. Scrape out dough onto a sheet of parchment paper and roll up into a 1 3/4"-diameter log. Chill until very firm, at least 2 hours.
  • Reheat oven to 350°F. Slice dough into generous 1/4"-thick slices with a serrated knife and place on 2 parchment-lined baking sheets, spacing 1" apart. Sprinkle with sea salt and bake until cookies are firm around the edges and slightly darker, 9-10 minutes. Let cool on baking sheets.

I came up with this recipe when I had a sweet tooth that needed tending to, and I wanted to make it a little healthier than your average cookie. So I replaced some of the flour with coconut and almond flour and used 1/2 cup of coconut oil instead of a whole cup of butter. I use all organic ingredients, but that's up to you. This is our family go-to cookie recipe. We've made it so many different ways and loved them all, but our favorites are semisweet chocolate chips with walnuts, or white chocolate chips with macadamia nuts. It's a win-win with these amazing cookies.

12 ounces bittersweet (not unsweetened) or semisweet chocolate, chopped garnish

1 1/4 cups slivered almonds (about 5 ounces), toasted, chopped

Steps:

  • For cookies:
  • Place slivered almonds in processor and add 1/4 cup sugar. Grind almonds finely. Using electric mixer, beat butter and remaining 3/4 cup sugar in large bowl until well blended. Beat in egg yolk, vanilla extract, and 1/4 teaspoon salt. Add ground-nut mixture and flour and beat until moist clumps form. Gather dough into 2 balls; flatten each ball into disk. 1/2 cup granulated sugar
1/2 teaspoon salt
1/2 cup cocoa
4 ounces semisweet chocolate, melted
1 teaspoon vanilla
2 eggs
2 cups flour
1 cup shredded coconut
1/2 cup sliced almonds
1/3 cup condensed milk
1/4 teaspoon almond flavoring
1/2 cup semi-sweet chocolate chips, melted
2 teaspoons shortening

Steps:

  • Beat butter, sugar and salt.
  • Add cocoa, melted chocolate and vanilla.
  • Add eggs and beat until creamy.
  • Slowly add flour and blend only until combined.
  • Chill in refrigerator several hours.
  • Meanwhile combine macaroon ingredients by hand in a small bowl.
  • Form dough into balls using a small cookie scoop or tablespoon and drop onto cookie sheet lined with parchment paper.
  • Flatten each ball with your thumb, leaving a depression in the center of each.
  • Fill each depression with 1 tsp of macaroon.
  • Bake at 350 F for 8-10 minutes, until cookies no longer look wet on top.
  • Cool completely on wire rack.
  • When cookies are cool.
  • Melt chocolate for drizzle.
  • Add shortening and stir well.
  • Drizzle over cookies.

10 tablespoons butter, melted and cooled

1 teaspoon pure vanilla extract
¼ teaspoon almond extract
½ cup whole almonds, (lightly toasted, and chopped)
½ cup almond, slivered - lightly toasted, and roughly chopped
⅔ cup white chocolate chip, white chocolate chunks, or white baking chips

  • Place butter in a heatproof bowl and melt in the microwave on the lowest heat setting in 10-second increments until completely melted; set aside to cool completely.
  • In another bowl, add the flour, baking soda, cornstarch (corn flour), and salt, and mix until well combined; set aside.

1 cup unsalted butter
1 large egg

2 cups bleached all purpose flour
1 pinch salt
3 ounces milk chocolate, chopped fine
3 ounces bittersweet chocolate, chopped fine
6 tablespoons unsalted butter, at room temperature, cut into 6 chunks

Steps:

  • On a baking sheet roast almonds until lightly browned, about 6-8 minutes, toss every 2-3 minutes Allow to cool to room temperature.
  • FOOD PROCESSOR METHOD---------------------.
  • Grind almonds and sugar in a food processor until very fine.
  • Cut butter into 16 chunks, with the processor add butter a chunk at a time.
  • Process until creamy.
  • Scrape down bowl.
  • Add egg and extract, process until mixed, scrape down bowl.
