Soft Oatmeal Coconut Chocolate Chip Cookies image

These cookies are soft and chewy and didn't last a day after making them! Once I thought I HATED coconut, but these made me realize I just didn't like overly sweet coconut. These are fabulous! Made with whole wheat flour and oatmeal, it's a better alternative to the traditional cookie.

TOASTED COCONUT CHOCOLATE CHIP COOKIES

Toasted Coconut Chocolate Chip Cookies image

I've made this recipe from Ladies Home Journal for the past 15 years. My original copy is half burned (a little problem toasting the coconut) so I thought I better get this published. The cookie dough is so delicious; tastes like a candy bar. The toasted coconut takes it to new heights!

  • Use a large skillet. This will ensure that the cookie has enough room to spread and cook evenly.
  • Don't overmix the batter. Overmixing will make the cookie tough.
  • Be patient. It takes about 20 minutes for the cookie to cook through.
  • Let the cookie cool for a few minutes before serving. This will make it easier to cut and serve.
