Time 38m

Yield 6 dozen cookies

Number Of Ingredients 8

1 pkg. Pillsbury® Sugar Cookie Mix
1/4 cup Jif® Creamy Peanut Butter
6 tbsps. butter, melted, divided
2 large eggs, divided
1/2 tsp. vanilla extract
1/2 cup Pillsbury BEST® All Purpose Flour
1/4 tsp. salt
1/2 cup Jif® Chocolate Flavored Hazelnut Spread

Steps:

  • BEAT 1 3/4 cups cookie mix, peanut butter, 3 tablespoons melted butter, 1 egg and vanilla in medium bowl with electric mixer on medium speed until blended.
  • STIR flour, salt and remaining cookie mix in a separate medium bowl until blended. Add chocolate hazelnut spread, remaining 3 tablespoons melted butter and 1 egg. Beat with electric mixer on medium speed until well blended. (Dough will be stiff.) Divide both peanut butter dough and chocolate hazelnut dough in half to make 4 parts. Roll each part between 2 sheets of wax paper to make four 10 x 8-inch rectangles. Stack flat layers of wrapped dough on top of each other on baking sheet. Chill 15 minutes.
  • REMOVE top sheets of wax paper from sheets of dough. Turn one peanut butter layer upside down onto one chocolate hazelnut layer, aligning corners. Remove wax paper from peanut butter layer. Allow dough to soften slightly, about 3 minutes. Beginning on one long side, roll up dough to make a log, making sure the center is rolled tightly with no air pockets. Roll wax paper around log. Repeat with remaining 2 sheets of dough. Freeze 1 hour.
  • HEAT oven to 375 degrees F. Cut logs into 1/4-inch slices. Place on ungreased baking sheet. Bake 7 to 8 minutes or until just lightly browned. Cool on baking sheet 2 minutes. Remove to wire rack to cool completely.
  • Spread peanut butter and/or chocolate hazelnut spread in a thin layer on bottom side of half the cookies. Place another cookie, bottom side down, on top of peanut butter layer to make sandwich cookies. Makes 3 dozen.

Time 11h45m

Yield Makes about 24

Number Of Ingredients 10

2 cups cake flour (not self-rising)
1/2 teaspoon baking soda
1/4 teaspoon kosher salt
9 tablespoons unsalted butter, room temperature
1 cup sugar
1 large egg
1 teaspoon pure vanilla extract
1 1/2 cups desiccated unsweetened coconut (6 ounces)
9 ounces bittersweet chocolate, chopped (1 3/4 cups)
1/2 cup sweetened condensed milk

Steps:

  • In a medium bowl, whisk together flour, baking soda, and salt. In the bowl of a mixer fitted with the paddle attachment, beat together 8 tablespoons butter and sugar on medium speed until light and fluffy, about 3 minutes. Beat in egg and vanilla. Reduce speed to low and slowly add flour mixture, beating until almost combined. Add coconut and beat until incorporated. Place dough between two sheets of parchment and roll out to a 10 1/2-by-12 1/2-inch rectangle, 1/4 inch thick. Using a sharp knife, trim 1/2 inch from edges to create a 10-by-12-inch rectangle. Transfer to a baking sheet. Refrigerate until firm, at least 1 hour and up to overnight.
  • Place chocolate and remaining 1 tablespoon butter in a heatproof bowl set over a pot of simmering water; stir until melted and smooth, about 3 minutes. Remove from heat and stir in condensed milk. Let cool 5 minutes. Mixture will be thick and pasty.
  • Remove dough from refrigerator and peel off top sheet of parchment. Using an offset spatula, spread chocolate mixture evenly over surface of dough. Using the bottom sheet of parchment for support, roll dough into a tight log. Wrap log in plastic; refrigerate at least 2 hours and up to overnight.
  • Preheat oven to 350 degrees. Remove plastic from log and cut log into 1/4-inch-thick rounds. Transfer to parchment-lined baking sheets, spaced 1 inch apart. Bake, rotating pans halfway through, until firm and beginning to brown around edges, 15 to 18 minutes. Let cool on sheets 5 minutes, then transfer cookies to wire racks and let cool completely. Cookies can be stored in an airtight container at room temperature up to 1 week.

CHOCOLATE PEANUT BUTTER PINWHEELS

Chocolate Peanut Butter Pinwheels image

This wonderful cookie recipe is one that I am begged to make over the holidays every year! They are out of a really, really old McCall's cookbook that my mother used to use. I took them to work last year, and everyone started calling me Julia Child! They are well worth the effort!

Provided by ChipotleChick

Categories     Dessert

Time 36m

Yield 40 cookies

Number Of Ingredients 10

2 cups sifted flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup butter, softened
1 cup packed brown sugar
1 cup creamy peanut butter or 1 cup chunky peanut butter
1 egg
1 teaspoon vanilla extract
1 (6 ounce) package semisweet chocolate morsels
1 teaspoon butter

Steps:

  • Sift flour with soda and salt.
  • Set aside.
  • Beat butter until fluffy.
  • Beat in sugar.
  • Beat in peanut butter, egg, and vanilla.
  • At low speed, add half flour mixture.
  • Mix in the rest by hand to form a stiff dough.
  • Refrigerate 30 minutes.
  • Meanwhile, make the filling (I am told that one can easily melt chocolate chips in a microwave, but I have not tried it. If you know how to do it, have at it!) Melt chocolate over hot (NOT BOILING) water, add butter.
  • Cool.
  • Divide dough in half.
  • Roll each half into a 8x10 inch rectangle on a lightly floured surface.
  • Spread each with half the filling.
  • From the long side, roll each rectangle tightly like a jelly roll.
  • Gently press edge to seal.
  • Wrap separately, seam side down, in saran wrap or foil.
  • Refrigerate until firm, about 8 hours or overnight before slicing and baking.
  • (They will keep in the fridge for a little over a week.) Preheat oven to 375, and place 1/2 inch slices 1 1/2 inches apart on a greased cookie sheet.
  • Bake 6-8 minutes or until lightly browned.
  • Let cool for a few minutes on sheet, then cool on wire rack.
  • Makes 40 cookies all together.

  • Combine butter and sugar; beat until creamy. Stir in yolks and extracts. Stir in orange zest and flour. Refrigerate dough for 30 minutes. Roll out dough into two, 1/4-inch thick rectangles. Spread with chocolate-hazelnut spread, leaving a 1/4-inch border. Roll up the dough jelly-roll style. Refrigerate another 30 minutes. Slice the rolls into 1/2-inch slices. Arrange slices on ungreased baking sheets. Bake at 350 degrees for 12 to 15 minutes, until edges are slightly golden.

Tips:

  • Use high-quality chocolate and hazelnut spread. This will make a big difference in the flavor of the pinwheels.
  • Make sure the butter is cold before you start. This will help the dough stay flaky and prevent it from becoming greasy.
  • Don't overmix the dough. Overmixing will make the dough tough.
  • Chill the dough for at least 30 minutes before rolling it out. This will make it easier to work with and prevent the dough from sticking to your hands.
  • Roll the dough out evenly. This will help ensure that the pinwheels are all the same size.
  • Spread the hazelnut spread evenly over the dough. If you don't, the pinwheels will not be evenly flavored.
  • Roll the dough up tightly. This will help keep the filling inside the pinwheels.
  • Chill the pinwheels for at least 30 minutes before baking. This will help them hold their shape.
  • Bake the pinwheels until they are golden brown. This will ensure that they are cooked through.
  • Let the pinwheels cool completely before serving. This will help them set and make them easier to slice.

Conclusion:

Chocolate hazelnut pinwheels are a delicious and easy-to-make treat that is perfect for any occasion. With just a few simple ingredients, you can create a batch of these delicious pastries that are sure to be a hit with everyone who tries them. So next time you're looking for a sweet treat, give chocolate hazelnut pinwheels a try! You won't be disappointed.
