1/4 c corn, grapeseed, or other neutral oil
1 lb eggplant, preferably the small lavender kind, cut into 1-inch cubes
1 lb granny smith or other tart, crisp aples, peeled, cored, and cut into eighths
1/2 c tamarind paste
1 tsp fennel seeds
1 Tbsp ginger, peeled and minced
1 tsp cardamom, ground
1 tsp cinnamon, ground
pinch cloves, ground
1/4 tsp cayenne
1/4 tsp asafetida, optional
salt, to taste
pepper, to taste
cilantro, chopped for garnish

Steps:

  • 1. Put the oil in a large skillet, preferable nonstick, over medium heat. A minute later, add the eggplant and apples and cook, stirring occasionally, until the eggplant and apples are both quite tender, 15 to 20 minute.
  • 2. Gently stir in all the remaining ingredients except the cilantro, along with 1/2 cup water; adjust the heat so the mixture simmers.
  • 3. Cook, stirring gently, until the mixture is thick. Taste and adjust the seasoning, then garnish and serve.

EASY STEWED APPLE

Use up a glut of apples by stewing them with lemon, sugar and cinnamon for use in cooking. Or, serve with yogurt or your favourite bakes and desserts

3 apples, peeled, cored and chopped (see tip)
2-4 tbsp caster or light brown soft sugar (depending on the sweetness of the apples)
1 tbsp lemon juice
½ tsp ground cinnamon

Steps:

  • Put the apples, sugar, lemon juice and cinnamon in a small pan with 1 tbsp water. Cover and cook over a medium heat for 5-10 mins, or until the apples are tender when pierced with the tip of a knife.
  • If you prefer a smoother mixture, continue to cook for a further 5 mins, uncovered, stirring frequently to break down the apples into a compote.

5 sweet eating apples (about 600g), such as Gala or Fuji, peeled, cored and chopped
¼ tsp ground cinnamon
50g raisins
150g fat-free Greek or non-dairy yogurt, to serve
4 tsp maple syrup (optional)
