  • Blend all spices together, and store in an airtight jar away from direct sunlight. For the ultimate flavor use within 6 months. Use in my Christmas Cakes , Christmas puddings, or my Homemade Mincemeat .

SPICE MIX:
1 cinnamon stick (3 inches)
1 teaspoon ground cinnamon
1 teaspoon whole allspice
1/2 teaspoon whole cloves
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg
ADDITIONAL INGREDIENTS FOR CRANBERRY WASSAIL:
1 quart cranberry juice
1 quart pineapple juice
1/2 cup sugar

Steps:

  • Combine spice mix ingredients; place in the center of two 6-in. square pieces of cheesecloth. Bring corners together and tie with kitchen string. Yield: 1 spice bag. , To use as a room scent: Place spice bag in a 2-cup microwave-safe measuring cup filled with hot water. Microwave on high for 3-4 minutes or until water boils. Continue to microwave at 30% power to add fragrance to the whole house. (Add more water if microwaved for additional time.) , To prepare cranberry wassail: Combine juices, sugar and spice bag in a 2-qt. microwave-safe bowl. Cover with plastic wrap and cut a vent. Microwave on high for 8-9 minutes or until mixture boils. Microwave at 50% power 3 minutes longer.

  • Tip the butter into a large bowl and whisk with an electric hand whisk. Add the icing sugar, milk and festive spice mix. Mix well, first with a spoon, then with the electric beaters until smooth and fluffy. Makes enough for 1 x 20cm sandwich cake or 12 cupcakes.

2 cups molasses
2 cups dark corn syrup
1/2 cup shortening, melted
2 tablespoons white vinegar
1 tablespoon cold water
10 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon powdered star anise
1/4 teaspoon ground cloves
1/8 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
Dash salt

Steps:

  • Combine the first five ingredients. Whisk together remaining ingredients; add to molasses mixture and mix well. Refrigerate, covered, 3 hours or overnight., Preheat oven to 375°. On a lightly floured surface, roll out dough to 1/8-in. thickness. Cut into desired shapes with floured 2-in. cookie cutters; place 1 in. apart on greased baking sheets. Bake until set, 10-12 minutes. Remove to wire racks to cool.

The aromatic scent of holidays and Mum's home baking, mixed spice is an essential jar on the spice rack. Mixed spice is a blend of sweet spices traditionally used in English cooking to provide a warming backnote. This typically English spice mixture can be purchased ready-mixed, but I prefer to make my own, as I find it difficult to find in France and I have my own special blend. It is essential for fruit cakes, Christmas plum pudding, mincemeat and hot cross buns; mixed spice is also a great addition to other fruity desserts such as apple & fruit pies, crumbles and compotes. Try it in cream cheese desserts, pickles, chutneys and mulled wine too. Make it up and buy the spices needed in small quantities, as the mixture soon loses its full rich flavour. Allspice, cinnamon, cloves, nutmeg and ginger are the usual blend of spices, but I sometimes like to add a few ground cardamom seeds as well as some ground coriander seeds. This spice mixture makes an unusual and attractive gift - tie a ribbon around the neck of the jar, with pretty paper and then add a seasonal recipe tag.
