Steps:

  • Pour half of the batter into the prepared pan, then sprinkle half of the streusel over the surface of the batter. Dollop the cream cheese mixture by the heaping tablespoons all over the surface of the batter, keeping it about an inch away from the sides. Spoon it over as evenly as you can, but don't try to spread it once it's on top of the batter.
  • Pour the remaining batter over the cream cheese and gently spread into an even layer. Sprinkle the remaining streusel on top. Steps:

  • For brown butter:
  • Simmer 2 cups plus 2 tablespoons butter in a large nonstick skillet over medium heat until browned bits form, 6-8 minutes. Pour into a 2-cup measuring cup. If needed, add more butter to measure 1 3/4 cups plus 2 tablespoons (added butter will melt).
  • For topping:
  • Whisk flour, sugar, and salt in a medium bowl. Stir in 3/4 cup plus 2 tablespoons brown butter (reserve remaining butter for cake); stir until moist clumps form. Stir in ginger. Set aside.
  • For cake:
  • Preheat oven to 325°. Butter pan generously. Whisk all-purpose flour and next 7 ingredients in a medium bowl. Using an electric mixer, beat remaining 1 cup browned butter and sugar in a large bowl until light and thick, 2-3 minutes. Add eggs one at a time, beating to blend between additions. Beat in sour cream, milk, and vanilla. Stir in flour mixture just to blend.
  • Spoon half of cake batter into prepared pan; smooth top. Scatter 1 cup of topping over. Spoon remaining batter in dollops over; smooth. Add almonds to remaining topping; squeeze to form 1/2" clumps and scatter evenly over batter in pan.
  • Bake until a tester inserted into center of cake comes out clean, about 1 hour 20 minutes. Let cool in pan on a wire rack for 10 minutes. Run a knife around edge of pan to release cake. Remove pan sides; let cool completely. DO AHEAD: Can be made 1 day ahead. Store airtight at room temperature.

1 tablespoon fine ground coffee
1 1/2 tablespoons water (heated to near-boil temp)
3/4 cup unsalted butter (well-softened)
1 cup sugar
2 cups self-raising flour (sifted)
1/2 cup ground almonds
3 eggs
icing sugar (to dust top layer of cake)
of fresh mint (sml sprigs for garnish)
4 tablespoons unsalted butter
1 cup icing sugar (sifted)
2 tablespoons creme de menthe

Steps:

  • For Cake: Preheat oven to 350°F.
  • Lightly grease & line 2 7-in rd baking tins w/greaseproof paper.
  • Put coffee grounds in a sml bowl & pour hot water over them. Leave to infuse for 4-5 minutes, then strain thru a fine sieve (See note below).
  • Put butter, sugar, flour, almonds, eggs & coffee in a lrg bowl. Beat well for 1 min till blended. Divide mixture evenly between the tins & level the surface.
  • Bake for 25 min till well-risen & firm to the touch. Leave in the tins for 5 min, then turn out onto a wire rack to fully cool.
  • For Filling: While cake layers are baking, cream the butter, icing sugar + creme de menthe liqueur together in a bowl till light & fluffy. Refrigerate till cake layers are baked & fully cooled.
  • Remove lining paper from sponge cake layers. Put 1 layer on serving plate (flat side up) & frost top surface only w/chilled filling. Gently place 2nd layer atop filling (flat side down). Refrigerate till ready to serve.
  • To Serve: Generously dust top of cake w/icing sugar & scatter fresh mint leaves over dusted surface. (This was inconsistent w/the pic which showed the mint leaves mounded in the center of the top of the cake, so choose the look you prefer).
  • NOTE RE PREP STEP 2: My pref would be to use a simple coffee filter to strain the coffee & remove the grounds. I'd just squeeze it to get all the coffee for the cake or press the filter w/the round side of a tbsp to manage that step easily. :-).

strawberry filling:
1 1/2 c fresh strawberries, washed, leaves removed, and chopped.
3 Tbsp sugar
1 1/2 tsp cornstarch
3 tsp water
CREAM CHEESE FILLING:
8 oz cream cheese, room temperature
1/4 c sugar
1 large egg
CAKE:
2 c all purpose flour
3/4 c sugar
1/2 c cold butter, cut into chunks
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
3/4 c sour cream
1 large egg
1 tsp pure vanilla extract

Steps:

  • 1. Preheat oven to 350 degrees F. Line a 9 inch round pan with a removable bottom, with a round piece of parchment paper. Spray a little cooking spray under parchment paper to hold it in place.
  • 2. PREPARE STRAWBERRY FILLING: Combine cornstarch and water in a small bowl, combine well. Mix chopped strawberries with the 3 Tbsp sugar in a small sauce pan. Cook over LOW heat stirring until sugar melts and strawberries have released their juice. About 5 minutes. ADD: Cornstarch mixture, stir until well combined. Stir another two minutes until it has thickened. Remove from heat and Cool to room temperature while you prepare the rest of the cake.
  • 3. PREPARE CREAM CHEESE FILLING: Use a hand mixer and a medium size bowl. Beat cream cheese on medium speed for 30 seconds, or until smooth. Add in the 1/4 cup of sugar and egg. Beat until well combined. SET ASIDE.
  • 4. PREPARE THE CAKE: Combine 2 cups of flour, 3/4 cup sugar, Cut in the cold butter until it resembles coarse crumbs. Measure out 3/4 cup of the crumbs and set aside. Add the baking soda, baking powder, and salt to the remaining flour mixture. Gently stir to combine.
  • 5. IN ANOTHER BOWL: Wisk sour cream, egg, and vanilla extract until well blended. Add this wet mixture to the dry flour mixture just until incorporated, it will be thick and lumpy, scrape sides of bowl as needed.
  • 6. ASSEMBLE THE CAKE AND BAKE IT: Spread the cake batter in the prepared pan, coming up the sides and forming a border and leaving a well in the center. Pour cream cheese mixture in the center over cake batter being careful not to go beyond the cake batter. Spread the Strawberry filling on top of the cream cheese mixture. Sprinkle the reserved 3/4 cup of crumbs over Strawberry Filling.
  • 7. In a preheated 350 degree F. oven bake cake 50-60 minutes until center is set and doesn't jiggle. COOL in pan on wire rack for 20 minutes before removing sides of pan. Chill.

1 package (8 oz) cream cheese, softened
1/3 cup sugar
1 teaspoon grated lemon peel
2 teaspoons lemon juice
1 package (3 oz) cream cheese
1/4 cup firm butter or margarine
2 cups Original Bisquick™ mix
1/3 cup milk
2 tablespoons sugar
1/2 teaspoon ground cinnamon
1 can (21 oz) peach pie filling
1/4 cup chopped walnuts, if desired

Steps:

  • Heat oven to 425°F. Grease cookie sheet with shortening. In small bowl, beat all cream cheese filling ingredients with electric mixer on medium speed until smooth; set aside.
  • In medium bowl, cut 3 oz cream cheese and the butter into Bisquick mix, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until particles are the size of small peas. Stir in milk. Place dough on surface sprinkled with Bisquick mix; roll in Bisquick mix to coat. Shape into ball; knead 8 to 10 times.
  • Roll or pat dough into 12x8-inch rectangle. Place on cookie sheet. Spread cream cheese filling down center of rectangle. Make cuts, 2 1/2 inches long, at 1-inch intervals on 12-inch sides of rectangle. Fold strips over filling, overlapping strips. Mix 2 tablespoons sugar and the cinnamon; sprinkle over top.
  • Bake 12 to 15 minutes or until golden; cool 10 minutes. Carefully place on serving platter. Spoon pie filling down center of coffee cake. Sprinkle with walnuts. Serve warm or cool. Store covered in refrigerator.

2 eggs, separated
1 cups heavy whipping cream (or milk)
1/2 tsp salt

1 can (21 oz.) Peach Pie Filling (I like Luck Leaf)
for icing
1 Tbsp. butter
1 tsp. vanilla
3/4 cup powdered sugar
3-5 Tbsp. heavy whipping cream (or milk)

Steps:

  • Preheat oven to 350° Mix flour, sugar, cinnamon, nutmeg and butter (will be crumbly). Take out one cup of this and save for topping. Mix egg yolks with cream and add to remainder of flour mixture. Add salt and baking powder and mix until very smooth. Gently fold in egg whites. Pour into greased springform pan. Put pie filling evenly over top of batter. Sprinkle with crumb mixture. Bake for 55-65 minutes. Until lightly brown on top. Allow to cool for five minutes then remove from pan. Drizzle with vanilla icing. For the Icing: Melt butter in microwave, then add vanilla. Slowly stir in powdered sugar. (will be clumpy) Add 3 tablespoons of cream (or milk) stir until creamy and smooth. Add more cream 1 tablespoon at a time until right consistency (runny enough to drizzle over cake). Notes you could also bake this in a greased 9x13 glass pan at 375° for 45 minutes.

STREUSEL TOPPING
1/2 c light brown sugar, packed
1/2 c all purpose flour
1/4 c quick or old-fashioned oats
1/4 c cold butter, cut into small pieces
1/2 c chopped, toasted pecans or walnuts, optional
CREAM CHEESE FILLING
4 oz cream cheese, softened
1/4 c sugar
2 Tbsp flour
1/4 tsp vanilla extract
1 small egg, beaten
2 Tbsp sour cream
CAKE BATTER
4 Tbsp butter, softened
6 Tbsp sugar
1/2 tsp vanilla extract
2 small eggs, beaten
1 c all purpose flour
1/2 tsp baking powder
1/2 tsp baking soda
1/2 c sour cream
1/3 - 1/2 c strawberry jam or preserves
STRAWBERRY GLAZE
1/4 c powdered sugar
1 - 2 Tbsp strawberry jam

Steps:

  • 1. For streusel, combine brown sugar, flour and oats in medium bowl. Cut in butter with pastry blender or with fingers to form course crumbs. (I pulse this in a small mini chopper). Stir in nuts if desired. Refrigerate until time to use.
  • 2. For the filling, in a mixing bowl beat cream cheese until creamy. Add sugar and flour and beat until well mixed. Blend in vanilla extract and egg. Stir in sour cream. Set aside.
  • 3. For the cake batter, cream together butter, sugar and vanilla. Add eggs, beating well after each addition. In a separate bowl, combine the flour, baking powder, and baking soda. Add the dry ingredients to the butter mixture alternately with the sour cream. Spread the batter evenly into a greased 9" square pan (or 8"..a little more cooking time may need to be added).
  • 4. Carefully spread cream cheese filling over the batter, leaving about a 1/4" border around the edges. Drop teaspoons of jam/preserves onto the cream cheese filling. I used almost a 1/2 cup.
  • 5. Evenly top with the streusel topping. Bake at 350 degrees for 30 to 40 minutes or until a toothpick inserted into the center comes out clean (jam may be on the tooth pick but that's okay...as long as it isn't actual cake batter). It took exactly 35 minutes in my oven.
  • 6. Let cool on wire rack for 30 minutes. While it is cooling, prepare the glaze by stirring 1 - 2 tablespoons of strawberry jam into the powdered sugar. If it's too thick, add a little milk. Drizzle over the cake. Refrigerate to allow the cream cheese and jam to firm up.

Tips:

  • Use room temperature ingredients. This will help the batter mix more evenly and produce a more tender cake.
