ROSEMARY ROASTED BUTTERNUT SQUASH AND BEETS WITH GARLIC
NOTE: IT AS BEEN POINTED OUT IN THE REVIEWS THAT SQUASH COOKS FASTER THAN THE BEETS! Modified from AJC (online) What's For Dinner -- Food writer and AJC dining critic Meridith Ford Goldman found multiple uses for fresh pumpkin in AJC's Halloween feature story. Cut away chunks of pumpkin from the lid and inside scraps of your jack-o'-lantern, or use a separate pumpkin for roasting in this delectable fall side dish. Because I no longer buy pumpkins for Halloween, I've substituted butternut squash in this recipe.

Steps:
- Heat the oven to 180C/160C fan/gas 4. Cut the bulbous end from the squash, then halve, scoop out the seeds and cut into wedges (reserve the long neck of the squash for another recipe). Spread the squash wedges out in a roasting tin. Peel the garlic and toss this through the wedges along with some seasoning and the olive oil. Roast for 30 mins until the squash is tender.
- Meanwhile, cook the couscous following pack instructions. Drain, return to the pan and leave to steam-dry. Tip the basil, parsley, pine nuts and half the extra virgin olive oil into a food processor with the sugar and some seasoning. Blitz to a coarse paste. With the motor running, drizzle in the remaining extra virgin olive oil and lemon juice. Season to taste, then toss with the couscous.
- When the squash is tender, roughly mash the garlic clove and gently stir through the squash. Toss the wedges through the couscous with the chicory leaves and goat's cheese. Any leftovers will keep covered in the fridge for up to a day.

Tips:
- Choose the right couscous: This recipe calls for whole wheat couscous, which has a nutty flavor and a slightly chewy texture. If you don't have whole wheat couscous on hand, you can use regular couscous, but it will be a bit less flavorful.
- Roast the vegetables beforehand: Roasting the butternut squash and beets ahead of time will save you time when you're assembling the salad. You can roast the vegetables up to 3 days in advance and store them in the refrigerator.
- Don't overcook the couscous: Couscous cooks very quickly, so it's important to keep an eye on it and remove it from the heat as soon as it's tender. Overcooked couscous will be mushy and unpleasant to eat.
- Add some fresh herbs: Fresh herbs, such as parsley, cilantro, or mint, can brighten up the flavor of this salad. Add them just before serving for the best flavor.
Conclusion:
This couscous salad is a delicious and healthy side dish that's perfect for any occasion. It's packed with roasted butternut squash, beets, and chickpeas, and it's tossed in a tangy dressing made with lemon juice, olive oil, and fresh herbs. The salad is also very easy to make, and it can be tailored to your own taste preferences. So next time you're looking for a healthy and flavorful side dish, give this couscous salad a try!
