This is the best cranberry gelatin salad I've ever tasted. It has been served with our Thanksgiving dinner for many years.

2 (3 ounce) packages raspberry flavored Jell-O® mix
1 (16 ounce) can whole cranberry sauce
½ teaspoon orange zest
⅓ cup orange juice
2 tablespoons lemon juice
1 (20 ounce) can pineapple tidbits, drained
¾ cup sliced celery

Steps:

  • Drain and reserve syrup from pineapple, add water to equal 1 cup.
  • In a saucepan over medium heat, bring the pineapple juice to a boil, add gelatin and stir until dissolved. Remove from heat, add cranberry sauce, orange peel, orange juice and lemon juice. Blend together and cool until slightly thickened.
  • Stir in pineapple and celery, turn into mold or 8 inch square pan. Chill until firm.

2 packages (3 ounces each) raspberry gelatin
1 can (14 ounces) jellied cranberry sauce
1 can (8 ounces) crushed pineapple, undrained
3/4 cup orange juice
1 tablespoon lemon juice
1/2 cup chopped walnuts
Lettuce leaves, optional
Miracle Whip, optional

Steps:

  • Add boiling water to gelatin; stir until dissolved, about 2 minutes. Stir in cranberry sauce. Add pineapple, orange juice and lemon juice. Refrigerate until thickened, about 30 minutes. 1 (20 ounce) can dole crushed pineapple, undrained
1 (6 ounce) package jell-o brand raspberry gelatin powder
1 (16 ounce) can whole berry cranberry sauce
1 medium dole apple, chopped
2/3 cup chopped walnuts

Steps:

  • Drain pineapple, reserving liquid in 1-quart liquid measuring cup. Remove 1 tablespoons of the crushed pineapple, set aside for garnish. Add enough cold water to the reserved liquid to measure 3 cups; pour into large saucepan. Bring to boil; remove from heat. Add gelatin; stir at least 2 minute until completely dissolved. Add cranberry sauce; stir (gelatin mixture should be thick. Pour into large bowl.
  • Refrigerate 1-1/2 hours or until slightly thickened (consistency of unbeaten egg whites).
  • Stir in remaining pineapple, apples and walnuts; stir gently. Pour into medium serving bowl.
  • Refrigerate 4 hours or until firm. Top with reserved crushed pineapple just before serving. Store leftover gelatin in refrigerator.
  • Cooking time would actually be refrigeration time.

1 can (20 oz) crushed pineapple, undrained
2 packages (3 oz) or 1 package (6 ounce) raspberry flavored gelatin
1 can (14 oz) whole berry cranberry sauce
1 medium apple chopped (Any will do. We like honey crisp.)
2/3 cup chopped walnuts (optional - tastes great if you choose to use them)

Steps:

  • Open can of pineapple and drain pineapple, reserving juice. Pour juice into a 4 cup liquid measuring dish.
  • Remove 1 Tablespoon of the crushed pineapple and set aside for garnish {if desired}
  • Add enough cold water to pineapple juice until it measure 3 cups; pour int a large saucepan.
  • Bring juice to a boil then remove from heat immediately.
  • Add gelatin. Whisk mixture at least 2 minutes until completely dissolved.
  • Add cranberry sauce and stir. {Gelatin mixture should be thick}.
  • Pour mixture into a large bowl. Refrigerate 15 - 30 minutes or until slightly thickened.
  • Remove from fridge and stir in pineapple, apples and walnuts; stir gently.
  • Pour into a medium serving bowl. & refrigerate for 4 hours or until completely firm.
  • Top with reserved crushed pineapple just before serving.
  • Store leftover gelatin in refrigerator.

2 (12 ounce) packages fresh cranberries
1 cup white sugar
1 (20 ounce) can crushed pineapple, drained
1 cup chopped pecans
1 pint heavy whipping cream
7 ounces miniature marshmallows

  • Coarsely chop the cranberries in a food processor; put in a large, non-metal bowl and mix in the sugar. Cover and refrigerate for 12 hours.
