CREAM OF CHAYOTE SOUP

Categories     main-dish

Yield 6 servings

Number Of Ingredients 9

1 large slice bacon or 2 tablespoons unsalted butter
1 yellow onion, diced
1 teaspoon freshly ground pepper
5 cups chicken stock, vegetable stock or water
2 bay leaves
1 small boiling potato, peeled and sliced
4 chayotes, peeled, seeded and sliced
1 cup heavy cream or half-and-half
2 limes, thinly sliced

Steps:

  • In a large soup pot over low heat, fry the bacon until almost all the fat is rendered, or melt the butter. Raise the heat to medium, add the onion, salt and pepper and cook, stirring occasionally, until soft, about 5 minutes. Add the stock or water, bay leaves and potato and simmer until the potato slices are soft, about 20 minutes
  • When the potato slices are soft, remove and discard the bay leaves and bacon. Add the chayotes and bring to a boil. Return the heat to medium and simmer, uncovered, until the chayotes are soft, about 15 minutes. Remove from the heat and let cool slightly. Working in batches, puree the soup in a blender until smooth. As each batch is pureed, pour the puree through a sieve placed over a bowl, pressing with the back of a spoon to extract all the juices. Pour the puree back into the pot, add the cream or half-and-half and bring just to a boil. Taste and adjust the seasonings.
  • Remove from the heat and ladle into warmed bowls. Slip a few lime slices into each bowl and serve hot.

CRAWFISH MIRLITON (CHAYOTE) SOUP

Crawfish Mirliton (Chayote) Soup image

My Cajun mother makes a wonderful mirliton casserole for the holidays that's always a hit. I had a craving for mirliton and crawfish one day, and pieced together this soup from several recipes and a few traditional Cajun cooking methods. Some people prefer to peel and pit mirliton before using them, but the whole fruit is edible. Crawfish tails are usually mostly cooked before being peeled and bagged, but it's best to be on the safe side. Sauteing them first makes sure that they are fully cooked and flavors the butter for the rest of the soup.

CRAWFISH MIRLITON CORN MACQUE CHOUX

Crawfish Mirliton Corn Macque Choux image

"Macque Choux" is a dish that the Native Americans introduced to the Cajuns and Creoles of Louisiana. It is best prepared with fresh corn; however, you may substitute canned if that is all that is available.

Yield 6 servings

Number Of Ingredients 17

1/2 stick unsalted butter
3 cups fresh corn kernels
1/2 cup chicken stock

1/2 cup celery, chopped
1 (10-ounce) can tomatoes, drained (recommended: Ro-tel)

CREAM OF CRAWFISH BOIL SOUP

Cream of Crawfish Boil Soup image

I just invented this tonight, after getting "stuck" with a couple of pounds of crawfish from a crawfish boil. It's so good I wanted to hop around the kitchen singing. This recipe is for crawfish boil leftovers; it won't be the same otherwise. You'll need two pounds of whole crawfish plus the corn, potatoes, etc, that were boiled with them. (My two-pound package contained two short corns on the cob, four little new potatoes, and two pounds of whole crawfish.) You can use whatever proportions you like, and don't let anybody tell you otherwise.

Time 25m

Yield 6 serving(s)

Number Of Ingredients 7

4 tablespoons butter
4 tablespoons flour
1 (49 ounce) can chicken broth (I used fat-free to make up for all the butter)
crawfish tail, peeled (see note above for quantity)
2 ears corn, cut off the cob
4 new potatoes
1/2 pint half-and-half

Steps:

  • Peel the crawfish, cut the corn off the cob, and set aside with the potatoes.
  • In a soup pot, saute the flour in butter, but do not brown it.
  • Pour in the chicken stock all at once, stirring with a whisk until blended. Don't worry if there's a few lumps because you'll get them with a stick blender later. Bring to a simmer.
  • Break up the potatoes with your fingers into the pot and add most of the crawfish tails and corn as well. Save a handful of crawfish and corn to add later. Bring the pot back up to a simmer.
  • Use a stick blender to blend the soup until it is mostly smooth. BE CAREFUL not to spatter hot soup on yourself!
  • Add the half and half and the remainder of the crawfish tails and corn. Stir well while heating for about five minutes more, then you're ready to serve.

Tips:

  • Choose fresh mirlitons: Look for mirlitons that are firm and have a deep green color. Avoid any that are bruised or have soft spots.
  • Peel and seed the mirlitons before cooking: To peel a mirliton, use a sharp knife to cut off the top and bottom. Then, use a vegetable peeler to remove the skin. To seed the mirliton, cut it in half lengthwise and scoop out the seeds with a spoon.
  • Use a good quality chicken or vegetable broth: The broth is the base of the soup, so it's important to use a good quality one. Look for a broth that is low in sodium and has a rich flavor.
  • Don't overcook the crawfish: Crawfish cooks quickly, so be careful not to overcook it. Overcooked crawfish will be tough and chewy.
  • Serve the soup hot: Cream of mirliton and crawfish soup is best served hot. You can garnish it with chopped green onions, parsley, or Creole seasoning.

Conclusion:

Cream of mirliton and crawfish soup is a delicious and hearty soup that is perfect for a cold winter day. It's easy to make and can be tailored to your own taste preferences. Whether you like it spicy or mild, creamy or chunky, this soup is sure to please everyone at your table. So, next time you're looking for a new soup recipe to try, give cream of mirliton and crawfish soup a try. You won't be disappointed!
