Time 2h45m

Yield Serves 4 to 6

Number Of Ingredients 10

2 cups lentils
2 to 4 tablespoons butter
1 onion, finely diced
1 bay leaf
6 cups vegetable or chicken stock (or water)
Sea salt and freshly ground black pepper
2 large garlic cloves
2/3 cup lightly toasted walnuts
1/2 cup plus 2 tablespoons crème fraîche
2 tablespoons minced parsley, optional

Steps:

  • Soak the lentils in water for 2 hours, then drain.

Bring to a boil, then reduce heat. Simmer, covered, until lentils are soft, about 30 minutes. Season with salt and pepper.
  • Using a mortar and pestle, pound the garlic with a large pinch of salt. Add the walnuts and work until finely ground. Add 2 tablespoons crème fraîche, mixing it in a teaspoon at a time, to form a paste.

Tips:

  • Use fresh walnuts: Fresh walnuts have a milder flavor and a creamier texture than store-bought walnuts, which can be bitter. If you can't find fresh walnuts, you can substitute pecans or almonds.
  • Soak the walnuts: Soaking the walnuts for at least 4 hours or overnight helps to soften them and make them easier to blend.
  • Use a high-powered blender: A high-powered blender is essential for getting a smooth and creamy soup. If you don't have a high-powered blender, you can use a regular blender, but you may need to blend the soup in batches.
  • Don't overcook the soup: The soup should be simmered for just a few minutes, until the walnuts are heated through and the soup has thickened. Overcooking the soup can make it bitter.
  • Serve the soup immediately: Cream of walnut soup is best served immediately, while it is still hot. You can garnish the soup with a sprinkle of chopped walnuts, a dollop of sour cream, or a drizzle of olive oil.

Conclusion:

Cream of walnut soup is a delicious and healthy soup that is perfect for a cold winter day. It is easy to make and can be tailored to your own taste preferences. So next time you are looking for a new soup recipe to try, give cream of walnut soup a try. You won't be disappointed!
