CREAMY CHICKEN & POTATO SOUP

Creamy Chicken & Potato Soup image

Time 45m

Number Of Ingredients 14

1 small onion, diced
2 Tablespoons butter (or bacon grease if you want more flavor)
2 (14.5 ounce) cans chicken broth
1 cup chopped carrots (around 3 whole carrots)
3 potatoes, cut into bite sized pieces
1 cup cubed precooked chicken (rotisserie chicken works great)
1 Tablespoon dried parsley
1/2 teaspoon season salt
1/4 teaspoon black pepper
1 (15.25 ounce) can corn
1 (8 ounce) package cream cheese
1 cup milk, any percentage
1/4 cup flour
1/2 pound diced bacon cooked (optional)

Steps:

  • In a large pot, saute onion in the butter. Once onions are translucent and cooked through, add chicken broth, carrots, potatoes and chicken. Bring to a boil, put lid on pot and lower temperature to a simmer. Simmer for 15 minutes. Add parsley, salt, pepper and corn. Mix well. If adding bacon, add it here. In a separate bowl blend cream cheese with hand mixer. Add 1/2 cup of soup broth to cream cheese mixture a little at a time, blending after each addition. This will help cream cheese from curdling and turn your cream cheese into a liquid mixture. Add cream cheese mixture to soup, stir. In same cream cheese bowl, add flour and milk 1/4 cup at a time until well blended. Add this to soup. Serve immediately. Bring to a boil and boil for 2 minutes until mixture thickens slightly.

CREAMY CHICKEN MUSHROOM POTATO SOUP

Creamy Chicken Mushroom Potato Soup image

This recipe is a family favorite. Good for any day of the week but especially on rainy or cold days.

Provided by Linda Pulley

Categories     Chicken Soups

Time 2h50m

Number Of Ingredients 7

8 chicken thighs
26 oz can of cream of mushroom soup
26 oz can of cream of chicken soup
4 medium potatoes
1 c chopped grean onions
1 c chopped carrots
1 c oil

Steps:

  • 1. In a large pot, empty both cans of soup. Fill one of the cans with water and empty into the pot. Stir and set aside.
  • 2. In a large skillet heat oil over medium high heat. Add chicken thighs and brown on both sides. When done , add the chicken to the soup pot mixture.
  • 3. Stir well and cover with lid. Cook over medium heat for an hour stirring every 15 minutes.
  • 4. After an hour peel and dice potatoes. Also add your carrots or whatever vegetable you prefer. (You don't have to use the same as me)
  • 5. Cover and cook for an additional 1 to 1 1/2 hours stirring frequently. Serve with rice or over rice. Or you can butter some rolls and dip.

Tips:

  • Use high-quality ingredients: Fresh, flavorful ingredients will make your soup taste better. Look for organic, free-range chicken and potatoes, and use fresh herbs and vegetables.
  • Don't overcrowd the pot: If you add too much chicken and potatoes to the pot, they won't cook evenly. Cook the chicken and potatoes in batches if necessary.
  • Simmer the soup for at least 30 minutes: This will allow the flavors to meld and develop. The longer you simmer the soup, the better it will taste.
  • Season the soup to taste: Add salt, pepper, and herbs to taste. You can also add a splash of cream or milk for a richer flavor.
  • Serve the soup hot: Creamy chicken potato soup is best served hot, with a side of crusty bread or crackers.

Conclusion:

Creamy chicken potato soup is a classic comfort food that is easy to make and loved by people of all ages. With its creamy texture, tender chicken, and flavorful potatoes, this soup is sure to be a hit at your next gathering. So next time you're looking for a warm and comforting meal, give this creamy chicken potato soup a try. You won't be disappointed!
