Kosher salt

8 ounces smoked Irish salmon
Toasted pumpernickel bread, for serving

  • Thinly slice the cucumber on a mandoline and place in a colander over a bowl. Season with 1/2 teaspoon salt and allow the cucumbers to sit for 5 minutes. Squeeze out the excess water and place the cucumbers in a clean medium bowl. Add the sour cream, dill and 1/4 teaspoon salt and stir with a rubber spatula to combine.
  • Lay the smoked salmon on one half of a platter lightly, so there is movement to the plate, leaving open the other half of the platter. 2 tablespoons butter
½ cup chopped onion

4-5 medium size cucumbers
salt to sprinkle over the cucumbers
1-1/2 cups heavy whipping cream
1/4 cup 5% white vinegar
1/4 tsp. salt
1/4 tsp. black pepper
already prepared 'hot' mashed potatoes

Steps:

  • 1. Peel and (thinly slice) each cucumber into a colander. And between each layer of cucumber, peeled and sliced, sprinkle with a bit of salt over each. (I normally set my colander inside a larger bowl, to allow the liquid from the cucumbers, to drain into the larger bowl.)
  • 2. Let cucumbers sit in the colander for 1-3 hours. Then transfer the cucumbers into another bowl. (Discard the remaining liquid that has drained into the larger bowl.)
  • 3. Now add the cream and vinegar to the cucumbers, and gently stir the cucumbers.
  • 4. Add the salt and pepper, and once again, gently stir the cucumbers.
  • 5. Cover the cucumbers, and place the bowl in the refrigerator for at least 2 hours.
  • 6. Serve the creamy cucumbers over the 'hot' mashed potatoes. (For each serving: Just place desired amount of mashed potatoes onto your plate, and top with desired amount of the creamy cucumbers.)
  • 7. Note: Before I top my potatoes with the cucumbers and cream, I first top my taters with a bit of butter, and let it melt into the potatoes just a bit. I just enjoy mine served this way!

6-7 medium size cucumbers, peeled & sliced thin
2 tablesp. finely chopped red or white onion
2 tablesp. thinly sliced green onions (or use red onion)
1 cup mayonnaise
1 cup sour cream
1 (1 oz.) packet hidden valley ranch salad dressing mix
1-1/2 tsp. dried dill weed
1/2 tsp. celery seed
1/4 tsp. black pepper
1/8 tsp. black pepper

Steps:

  • 1. In a large bowl mix together, the mayonnaise, sour cream, ranch dressing mix, dill weed, celery seed, plus the 1/4 teaspoon and 1/8 teaspoon of black pepper.
  • 2. Add the sliced cucumbers and onion, and gently stir to mix everything together.
  • 3. Serve salad immediately.
  • 4. Note: I have made this salad twice, once using chopped white onion, and thinly sliced green onion. The second time I made this salad, I added 4 tablespoons of finely chopped red onion, in place of the white and green onion, and that tasted great in the salad too! Also, when I added the sliced cucumbers, they were cucumbers I had in the refrigerator, which help the salad to stay cool.
