CRISPY PORK CHOPS WITH BUTTERED RADISHES

Crispy Pork Chops With Buttered Radishes image

These crisp, panko-crusted cutlets are your weeknight answer to tonkatsu or Milanese with a simplified, one-step breading procedure, no eggs or flour required. Thin pork chops, either bone-in or boneless, are seasoned with salt and pepper, then simply pressed into panko bread crumbs before crisping up in a hot, oiled skillet. While any quick-cooking vegetable could be tossed in the brown butter and spooned over the chops, radishes are especially nice for the way they keep their bite even after a trip to the skillet. Whatever you do, don't forget the lemon.

Time 20m

Yield 2 servings

Number Of Ingredients 9

2 bone-in or boneless pork chops (rib or loin), cut 1/2-inch thick (about 6 ounces each)
Kosher salt and black pepper
1 1/2 cups panko or fresh coarse bread crumbs
3 tablespoons canola oil, plus more as needed
4 tablespoons unsalted butter
2 tablespoons capers
1 bunch radishes, with tops on if you like, cut into quarters
Flaky sea salt
1 lemon, cut into wedges

Steps:

  • Season pork with salt and pepper. Place panko in a rimmed baking sheet or baking dish and season it with salt and pepper. Working one at a time, firmly press both sides of each pork chop into the seasoned panko until the chops are evenly and well coated.
  • Heat oil in a large skillet (10 to 12 inches) over medium-high heat; it should evenly coat the bottom of the skillet. If it doesn't, add a bit more oil. Place the pork chops in the skillet and cook until deeply golden brown, like the color of a well-baked croissant, 3 to 4 minutes.
  • Using tongs or a spatula, flip pork and continue to cook until well browned on the other side, too, another 2 to 3 minutes. Transfer pork to a plate, platter or cutting board lined with paper towel and season with salt.
  • Wipe out skillet and return to the stove over medium-high heat. Add butter, letting it sizzle, brown and foam. Add capers and half of the radishes, seasoning them with salt and pepper. Toss a few times, just to wilt the radish greens, if they're still on, and to evenly coat the radishes with the brown butter and capers.
  • Divide pork chops among plates and nestle butter-tossed radishes and capers alongside, plus remaining raw radishes. Sprinkle with a bit of flaky salt and serve with lemon wedges alongside for squeezing over.

PANKO FRIED PORK CHOPS WITH TEXAS TOAST

Panko Fried Pork Chops with Texas Toast image

I absolutely love the fried pork chop from Bertha's Kitchen in Charleston. If you're ever in my neck of the woods, you've got to go there and try it! This sandwich is inspired by her fried pork chop, with my spin, of course. For that extra crunch, I coat the pork chops in panko breadcrumbs after they've had a dip in some seasoned buttermilk.

Yield 4 servings

Number Of Ingredients 36

1 lb boneless pork chop
½ cup French's® Creamy Yellow Mustard, plus 1 tablespoon
1 tablespoon honey, warmed
1 tablespoon apple cider vinegar
1 teaspoon kosher salt, plus more for sprinkling
1 teaspoon freshly ground black pepper
½ teaspoon McCormick® Paprika
1 large egg
2 tablespoons milk
⅓ cup all purpose flour
½ teaspoon McCormick® Garlic Powder
1 teaspoon McCormick® Onion Powder
1 cup panko breadcrumbs
¼ cup grapeseed oil
2 tablespoons unsalted butter
½ shallot, minced
¼ cup white wine
1 cup chicken broth
2 tablespoons French's® Creamy Yellow Mustard
1 tablespoon honey
¼ cup heavy cream
2 teaspoons lemon juice
½ tablespoon McCormick® Dried Parsley flakes
kosher salt, to taste
freshly ground black pepper, to taste
2 ½ cups kale, chopped
¾ cup shredded radicchio
¼ cup dried cranberries
1 apple, cored and diced
⅓ cup grapeseed oil
3 tablespoons apple cider vinegar
2 teaspoons honey
½ lemon, juiced
½ teaspoon red pepper flakes
kosher salt, to taste
freshly ground black pepper, to taste

Steps:

  • Marinate the pork chops: Place the pork chops in a gallon-size ziplock bag. Add ½ cup French's Creamy Yellow Mustard, warmed honey, the apple cider vinegar, salt, pepper, and McCormick® Paprika. Massage through the bag until the pork chops are completely covered, then seal the bag and refrigerate for 2 hours.
  • Make the honey mustard sauce: In a small saucepan, melt the butter over medium heat. Add the shallot and cook until fragrant and translucent, about 2 minutes. Deglaze the pot with the white wine, then whisk in the chicken broth, French's® Creamy Yellow Mustard, honey, heavy cream, and lemon juice. Simmer until thickened, 3-5 minutes. Remove the pot from the heat and stir in the McCormick® Dried Parsley flakes. Season with salt and pepper to taste.
  • Make the crunchy green salad: In a large bowl, toss together the kale, radicchio, dried cranberries, and apple.
  • In a small bowl, whisk together the grapeseed oil, apple cider vinegar, honey, lemon juice, and red pepper flakes.
  • Pour the dressing over the salad and toss to coat, then season with salt and pepper to taste.
  • Cook the pork chops: In a shallow bowl, whisk together 1 egg, the milk, and the remaining tablespoon of French's® Creamy Yellow Mustard. In a separate shallow bowl, stir together the flour, McCormick® Garlic Powder, and McCormick® Onion Powder. Add the panko to a third shallow bowl.
  • Dip the pork chops into the flour mixture, then the egg mixture, then into the panko, pressing the bread crumbs into both sides of the meat to coat completely.
  • Heat the grapeseed oil in a medium high-walled skillet over medium heat until the temperature reaches 350°F (180°C). Working in batches to avoid overcrowding the pan, cook the pork chops until golden brown and the internal temperature reaches 145°F, 2-3 minutes per side. Transfer to a paper towel-lined plate to drain and sprinkle with salt.
  • Serve the crispy pork chops with the honey mustard sauce and crunchy green salad alongside.
  • Enjoy!

Tips:

  • To ensure even cooking, choose pork chops that are of uniform thickness.
  • Use a meat mallet or rolling pin to gently pound the pork chops until they are about 1/4-inch thick. This will help them cook evenly and prevent them from curling up.
  • Season the pork chops generously with salt and pepper. You can also add other spices and herbs, such as garlic powder, onion powder, or paprika.
  • Dredge the pork chops in flour. This will help the panko crumbs adhere to the chops.
  • Dip the pork chops in the egg wash. This will help the panko crumbs stick to the chops.
  • Coat the pork chops in panko crumbs. Press the crumbs firmly onto the chops so that they adhere well.
  • Heat a large skillet over medium heat. Add the oil and swirl to coat the bottom of the pan.
  • Cook the pork chops for 3-4 minutes per side, or until they are golden brown and cooked through. The internal temperature of the pork chops should be 145 degrees Fahrenheit.
  • Serve the pork chops immediately with your favorite sides.

Conclusion:

Crispy panko pork chops are a delicious and easy-to-make meal. By following these tips, you can ensure that your pork chops are cooked to perfection and that the panko crumbs are crispy and flavorful. Serve these pork chops with your favorite sides, such as mashed potatoes, roasted vegetables, or a simple salad. You can also enjoy them on their own as a quick and easy lunch or dinner.
