2 large russet potatoes
¾ cup sour cream
2 cloves garlic, minced
½ teaspoon cumin
salt, to taste
½ teaspoon oregano
8 corn tortillas
oil, for frying
sour cream, to taste
salsa, to taste
cotija cheese, to taste
¼ cup fresh cilantro, to taste

Steps:

  • Thoroughly wash the potatoes and peel the skin off. Cut into smaller pieces and place in a pot of cold water.
  • Bring to a boil over medium high heat and allow potatoes to cook until they are soft.
  • Place softened potatoes into a large bowl. Mix in sour cream, garlic, cumin, salt pepper and oregano, and mash until well combined.

4 medium potatoes, peeled and halved
1 cup milk
4 tablespoons salted butter
½ teaspoon ground white pepper
½ cup grated Parmesan cheese
½ cup crumbled cotija cheese
12 corn tortillas
½ cup finely chopped fresh cilantro
2 tablespoons olive oil

Steps:

  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until soft enough to mash, 20 to 25 minutes. Drain. Add milk, butter, and white pepper and mash over medium heat until mixed, adding a splash more milk if needed. 5 roma tomatoes
2 cloves garlic
1 jalapeño, seeded
2 teaspoons tomato bouillon
½ cup water
1 lb russet potato
2 tablespoons salted butter
½ teaspoon paprika
½ teaspoon dehydrated onion
½ teaspoon garlic powder
kosher salt, to taste
freshly ground black pepper, to taste
12 corn tortillas
½ cup neutral oil, for frying
¼ medium green cabbage, shredded
½ cup crumbled cotija cheese

Steps:

  • Make the sauce: In a blender, combine the tomatoes, garlic, jalapeño, tomato bouillon, and water. Blend for 20 seconds, or until smooth.
  • Pour the tomato sauce into a small saucepan, then simmer over low heat for about 20 minutes, until reduced by half. Remove the pot from the heat and set aside until ready to serve.
