CRANBERRY WALNUT TART

Cranberry Walnut Tart image

Nut tarts are often too sweet, but this one is made perfect with the addition of tart cranberries. Another long-time holiday tradition dish in my home, this was originally published in Bon Appetit in January, 1991 and was so popular it appeared again in November, 2003. Prep time includes chilling time for the dough.

Time 1h10m

Yield 1 tart, 10 serving(s)

Number Of Ingredients 9

3 large eggs
2/3 cup dark brown sugar, packed
2/3 cup light corn syrup
1/4 cup butter, melted and cooled (unsalted)
1/2 teaspoon salt
1 teaspoon vanilla
1 1/4 cups cranberries, chopped (7 oz, thawed if frozen)
1 cup walnuts, chopped (1/4 pound)
raw rice

Steps:

  • Make shell:.
  • Roll out dough into a 13-inch round (1/8 inch thick) on a floured surface with a floured rolling pin and fit into tart pan. Trim edge of dough, leaving a 1/2-inch overhang, then fold overhang inward and press against side of pan to reinforce edge. Lightly prick bottom of shell all over with a fork, then chill 30 minutes.
  • Put oven rack in lower third of oven and preheat oven to 425°F Line shell with foil and fill with pie weights.
  • Bake until pastry is set and pale golden on rim, about 15 minutes. Carefully remove foil and weights and bake shell until pale golden all over, 5 to 10 minutes more. Transfer shell in pan to a rack.
  • Make filling:.
  • Move oven rack to middle position and reduce oven temperature to 350°F.
  • Whisk together eggs, brown sugar, corn syrup, butter, salt, and vanilla in a bowl until smooth, then stir in cranberries and walnuts.
  • Pour filling into shell and bake tart until filling is set and golden, 40 to 45 minutes. (If pastry edge darkens before tart is done, cover edge with a pie shield or foil.) Cool completely in pan on rack.

CREAM CHEESE CROSTATA WITH ORANGE MARMALADE

Cream Cheese Crostata With Orange Marmalade image

As published in Bon Appetit, Crostata con Crema di Formaggio e Marmellata di Arance Amare was touted as being one of the most popular desserts at Restaurant Zibibbo in Florence. I love a recipe that has few ingredients and a simple preparation, but results in a nice presentation and fabulous flavor. This is one of those. Actually, I did not try the crust recipe, as I had an extra crust already made that I needed to use so I used it. I do intend to make this again soon, though, and will update the recipe as to the results. Prep time includes 2 hours chill time. The recipe was credited to Chef Benedetta Vitali of Zibibbo.

1 1/2 cups cake flour
4 1/2 tablespoons sugar
1/2 large egg yolk
9 tablespoons chilled unsalted butter, cut into 1/2-inch cubes
1 (8 ounce) package cream cheese, room temperature

Using your hands, gently mix the ingredients together until well blended and dough forms. Flatten into disk, wrap in plastic, and chill at least 1 hour or overnight.

CHOCOLATE KAHLUA WALNUT TART

Chocolate Kahlua Walnut Tart image

Received on line from Cooking.com and so pretty and described as: a delicious holiday tart tastes impressive, but it's a breeze to make. Warm, earthy chocolate, a hint of coffee-flavored liqueur and toasted walnuts are baked in a delicious shortbread cookie crust. Although the tart pan makes a pretty fluted edge, a 10-inch springform pan will work just as well.

CROSTATA DI NOCI E MIRTILLI ROSSI: CRANBERRY WALNUT TART

Crostata Di Noci E Mirtilli Rossi: Cranberry Walnut Tart image

This recipe comes from the 1998 Recipes of the Five Brothers: Volume I cookbook by Lipton. My mother made this once, and it was delicious. It is, however, very tart - so add more sugar to the cranberry filling if tart is not your thing. The recipe is for both the dough and the filling, and prep time includes 1 hour chill time.

ITALIAN WALNUT-RAISIN WHOLE-WHEAT BREAD (PANE ALLE NOCI E UVA)

Italian Walnut-raisin Whole-wheat Bread (pane Alle Noci E Uva) image

A remarkable bread - wonderful, fine texture. From Beth Hensperger's 'The Bread Bible'. Her desciption: 'I think this is one of the best breads in the Western world. It is distinctly stamped with the fragrance of raisins and walnuts. Use a fruity Italian extra-virgin olive oil for the bread; the special quality the oil gives it is very desirable.

Categories     Yeast Breads

Time 3h40m

Yield 3 loaves

Number Of Ingredients 12

2 1/2 cups warm water (105 - 115F)
2 (1 tablespoon) packages active dry yeast
1 pinch light brown sugar or 1 teaspoon honey
1/2 cup extra virgin olive oil
1/4 cup honey
1 tablespoon salt
4 cups fine-grind whole wheat flour, preferably stone ground
1 1/2-1 3/4 cups unbleached all-purpose flour
2 cups dark raisins, plumped in hot water 1 hour and drained on paper towels (10 ounces)
3 cups walnuts, broken or chopped (12 ounces)
2 tablespoons whole wheat flour, for sprinkling
2 tablespoons unprocessed wheat bran, for sprinkling

Steps:

  • In a small bowl, pour 1/2 cup of the warm water; Add yeast and sugar; stir to dissolve and let stand until foamy, about 10 minutes.
  • In a large mixing bowl with a whisk or the work bowl of a heavy-duty electric mixer with the paddle attachment, combine the remaining 2 cups warm water, olive oil, honey, sale and 2 cups of the whole-wheat flour; Add the yeast mixture; Beat vigorously until smooth, about 1 minute.
  • Add the remaining whole-wheat flour, 1/2 cup at a time; Add the unbleached flour, 1/4 cup at a time, until a soft dough that just clears the sides of the bowl is formed; Switch to a wooden spoon when necessary if making by hand.
  • Turn the dough out onto a very lightly floured work surface; knead until soft and springy yet resilient to the touch, dusting with flour only 1 tablespoon at a time as needed to prevent sticking, about 6 minutes.
  • If kneading by machine, use dough hook and knead 5 to 6 minutes, or until dough is smooth and springy.
  • Do not add too much flour, or the loaf will be too dry and hard to work.
  • Place the dough in a greased bowl, turning once to coat; cover with plastic wrap; let rise until doubled in bulk, 2 to 2 1/2 hours.
  • Grease or parchment-line a baking sheet; Combine the whole-wheat flour and wheat bran and sprinkle on the baking sheet; Turn dough out onto lightly floured work surface without punching it down.
  • Pat into large oval and sprinkle evenly with half the drained raisins and half the walnuts; Press the nuts and fruit into the dough and roll it up; Pat the dough down into an oval once again and sprinkle it evenly with the remaining nuts and raisins.
  • Press the addition in and roll the dough up again.
  • Divide the dough into 2 or 3 equal portions.
  • Shape into 3 tight round loaves, or 2 baguettes about 14 inches long; Gently pull the surface taut from the bottom on both; Place the loaves on the pans; cover loosely with plastic wrap and let rise until doubled in bulk, 45 minutes to an hour.
  • Twenty minutes before baking, preheat the over to 400F, with a baking stone, if desired.
  • Slash the round or baguette loaves quickly with a serrated knife with two parallel lines and one intersecting line no more than 1/4 inch deep; Place the baking sheet directly on the stone or on an oven rack and bake until loaves are brown, crusty, and sound hollow when tapped with your finger, 35 to 40 minutes for the round loaves and 25 to 30 minutes for the baguettes.
  • Transfer to a cooling rack; cool completely before slicing.

PLUM WALNUT TART

Plum Walnut Tart image

The cookie crust for this recipe is a wonderful secret and I use it as the base of many pies now. I take several shortcuts with this recipe. I live in the tropics so I rarely chill things as it just goes soft within 5 minutes. So I just press the dough straight into a Pyrex flan tin (or similar table suitable dish that can tolerate the oven). I save any rolling for the lattice top and I'm not that fussy with how it looks as it comes out well and homemade looking and disappears so quickly. I use the big 800g + tins of plums and often use 2 tins as I like plums. This crust works will with other fruit that is pie friendly.
