- Remove from the oven, cover loosely with aluminum foil, and allow to rest for about 10 minutes before carving.
- Garnish with orange and lime slices (if using) and serve with rice and black beans.

MOJO ROAST CHICKEN (POLLO ASADO)
Mojo-marinated roast chicken, just like grandma used to make! Serve with white rice, which is the traditional way. It's also great with mashed potatoes or in sandwiches with Cuban bread or fresh rolls. You can use half the mojo recipe for a smaller bird, drumsticks, or thighs.

Tips:
- Use a whole chicken: This will give you the most flavorful mojo chicken. If you don't have a whole chicken, you can use chicken breasts or thighs. Just be sure to adjust the cooking time accordingly.
- Make the mojo sauce ahead of time: The mojo sauce can be made up to 2 days in advance. This will allow the flavors to develop and meld together.
- Use a variety of citrus fruits: The mojo sauce is traditionally made with sour oranges, but you can also use a combination of oranges, limes, and lemons. If you don't have any citrus fruits on hand, you can use white vinegar instead.
- Don't overcrowd the chicken: When you're cooking the chicken, be sure to give it enough space so that it can cook evenly. If you overcrowd the chicken, it will steam instead of fry and it won't be as flavorful.
- Serve with rice and beans: Mojo chicken is traditionally served with rice and beans. This is a delicious and easy way to complete your meal.
Conclusion:
Mojo chicken is a flavorful and easy-to-make dish that is perfect for any occasion. The mojo sauce is made with a variety of citrus fruits, garlic, and spices, and it gives the chicken a delicious tangy flavor. The chicken is then fried until it is golden brown and crispy. Mojo chicken is a great dish to serve with rice and beans, or you can enjoy it on its own. Give this recipe a try and see for yourself how delicious mojo chicken can be!
