PEACH & CUCUMBER SIMPLE SALAD

Peach & Cucumber Simple Salad image

A super simple salad/side dish that works well with a hot dish, such as one with chilies, because it's cooool. I actually add the vinegar pretty much by eye without measuring. I don't add salt, but feel free to do so. It's great if you can let it sit a bit before serving so the flavors have a chance to meld, but it also works as a side dish to throw together at the last minute.

Tips:

  • Choose ripe, juicy peaches for the best flavor. If your peaches are not ripe, you can let them ripen at room temperature for a few days before using them.
  • Use a sharp knife to cut the peaches and cucumber. This will help to prevent them from becoming bruised or mushy.
  • If you don't have a mandoline, you can use a sharp knife to thinly slice the peaches and cucumber.
  • Be careful not to overdress the salad. A little bit of dressing goes a long way.
  • Serve the salad immediately, or chill it for later.

Conclusion:

This cucumber white peach salad is a refreshing and delicious summer dish. It's perfect for a light lunch or dinner, and it's also a great side dish for grilled meats or fish. The combination of sweet peaches, crisp cucumber, and tangy dressing is irresistible. So next time you're looking for a healthy and flavorful salad, give this one a try.
