WARM DRESSING FOR SPINACH

Warm Dressing for Spinach image

This tangy-sweet dressing is perfect for large gatherings. Keep it warm in a crockpot or slow-cooker. I like serving it over dandelion or spinach salad, and I also like it mixed in with mashed potatoes. Just a little gives a lot of flavor. -Victoria Hahn Northampton, Pennsylvania

Remember, though, to never pick dandelions in areas that have been sprayed with weed killer.-Noami Giddis, Grawn, Michigan

DANDELION GREENS WITH HOT OLIVE-OIL DRESSING

Dandelion Greens with Hot Olive-Oil Dressing image

Categories     Garlic     Leafy Green     Nut     Side     Quick & Easy     Spring     Gourmet     Vegan     Vegetarian     Pescatarian     Dairy Free     Wheat/Gluten-Free     Peanut Free     Soy Free     Kosher

Yield Makes 4 to 6 (side dish) servings

Number Of Ingredients 9

1/4 cup extra-virgin olive oil
3 garlic cloves, thinly sliced lengthwise
1/3 cup sliced almonds (1 ounce)
1/2 cup golden raisins
2 tablespoons Sherry vinegar
1/2 teaspoon sugar
1/4 teaspoon salt
1/4 teaspoon black pepper
1 pound tender young dandelion greens, any tough stems discarded

Steps:

  • Heat oil in a 10-inch heavy skillet over moderate heat until hot but not smoking, then cook garlic and almonds, stirring frequently, until pale golden, about 2 minutes. Add raisins and cook, stirring, until garlic is golden and raisins are plumped, about 1 minute. Remove from heat and add vinegar, sugar, salt, and pepper, stirring until combined.
  • Pour hot dressing over dandelion greens in a bowl, tossing with tongs to coat.

Tips:

  • Select tender dandelion greens: Look for young, vibrant leaves with a bright green color. Avoid any wilted or bruised leaves.
  • Wash the dandelion greens thoroughly: Rinse the greens multiple times in cold water to remove any dirt or debris. You can also soak them in a bowl of cold water for a few minutes to help remove any bitterness.
  • Use a variety of toppings: The warm bacon dressing is a classic, but you can also experiment with other toppings like crumbled blue cheese, chopped walnuts, or dried cranberries. You can also add a squeeze of lemon juice or a drizzle of balsamic vinegar for extra flavor.
  • Serve the salad immediately: Dandelion greens wilt quickly, so it's best to serve the salad as soon as it's made. If you need to make it ahead of time, store the greens and dressing separately and assemble the salad just before serving.

Conclusion:

Dandelion salad with warm bacon dressing is a delicious and nutritious dish that can be enjoyed as a light lunch or as a side dish. The dandelion greens are a good source of vitamins and minerals, and the bacon dressing adds a savory and smoky flavor. With its simple ingredients and easy preparation, this salad is a great way to enjoy the fresh flavors of spring.
