1 1/4 cups all-purpose flour
1/4 cup cocoa
3/4 cup sugar
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1 teaspoon salt
1 tablespoon instant coffee
1/2 cup milk
3 tablespoons melted butter or 3 tablespoons margarine
1/2 teaspoon vanilla extract
1 1/3 cups hot water
1 cup sugar
1/8 cup brown sugar
1/4 cup cocoa
1 tablespoon instant coffee
1/4 teaspoon salt

Steps:

  • preheat oven to 350 degrees. combine flour, cocoa, sugar, baking powder, baking soda, and salt.
  • dissolve coffee in milk and add to dry ingredients. add melted butter and mix all together. mix well until batter is even and has no lumps; should be thick.

2 tablespoons Dutch-process cocoa powder
3/4 teaspoon kosher salt (we use Diamond Crystal)
8 ounces semisweet chocolate (61 to 66 percent), chopped (about 2 cups)
1 1/2 cups sugar
3 large eggs
2 teaspoons pure vanilla extract

Steps:

  • Preheat oven to 350°F. Butter a 9-inch square baking pan and line with parchment, leaving a 2-inch overhang on two sides; butter parchment.

1 8-ounce package cream cheese, room temperature
1 large egg
1/4 cup semisweet chocolate chips
1 tablespoon all purpose flour
1 cup (2 sticks) unsalted butter, room temperature
1 1/4 cups sugar
4 large eggs
1 teaspoon vanilla extract
1 1/3 cups all purpose flour
3/4 cup unsweetened cocoa powder
1/4 teaspoon baking powder
6 ounces semisweet chocolate, chopped, or chocolate chips
1 tablespoon vegetable oil

Steps:

  • Combine syrup and 2 ounces chopped chocolate in heavy small saucepan. Stir over low heat until chocolate melts; cool. Beat cream cheese and egg in medium bowl. Stir in chocolate mixture. Blend in 1/4 cup chocolate chips and flour. Set aside.
