SPAGHETTI DIABLO WITH SHRIMP

Spaghetti Diablo with Shrimp image

The sauce was tangy and sharp, mellow by my standards for spice, but just right for Nancy and Quinn. Topped with the shrimp, Pecorino cheese and some parsley, it was very satisfying.

Yield 4

Number Of Ingredients 15

1 teaspoon olive oil
1 green bell pepper, chopped
1 yellow bell pepper, chopped
1 onion, chopped
4 cloves garlic, minced
salt and ground black pepper to taste
2 (14.5 ounce) cans no-salt-added diced tomatoes
½ cup white wine
½ cup chopped fresh parsley, divided
½ teaspoon dried basil
½ teaspoon dried oregano
½ teaspoon red pepper flakes
8 ounces whole-wheat spaghetti
12 ounces cooked shrimp
½ cup grated Pecorino-Romano cheese, or to taste

Steps:

  • Heat oil in a Dutch oven over medium-high heat. Cook and stir green bell pepper, yellow bell pepper, onion, and garlic in hot oil until tender, 5 to 7 minutes. Season the mixture with salt and pepper.
  • Stir tomatoes, wine, 1/4 cup parsley, basil, oregano, and red pepper flakes into the bell pepper mixture; bring to a boil, reduce heat to low, and put a cover on the Dutch oven. Cook, stirring occasionally, until the tomatoes break down, about 2 hours.
  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water until nearly cooked through, about 10 minutes; drain.
  • Stir drained pasta and cooked shrimp into the tomato sauce; cook until the pasta is cooked completely through yet firm to the bite, 2 to 3 minutes more. Serve with remaining parsley and Pecorino-Romano cheese.

DIABLO SHRIMP

Diablo Shrimp image

I don't know where I had this. It must have been a restaurant, and I couldn't find any recipes that are close to what I remember. So this is my take on it. I make this for my wife and I. She really loves it.

Yield 4

Number Of Ingredients 10

1 (12 ounce) package angel hair pasta
⅓ cup salted butter
⅓ cup olive oil
1 jalapeno pepper, sliced
1 tablespoon red pepper flakes
¾ cup dry white wine
salt and ground black pepper to taste
24 peeled and deveined medium shrimp
1 (4 ounce) jar capers
2 tablespoons grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook angel hair at a boil, stirring occasionally, until cooked through yet firm to the bite, 4 to 5 minutes; drain.
  • Melt butter in a large skillet over medium-low heat. Stir olive oil, jalapeno pepper, and red pepper flakes into the melted butter; cook until the flavors of the peppers infuse into the butter mixture, about 10 minutes. Remove and discard the jalapeno slices if desired; they will make this dish really hot if you leave them in. Stir white wine into the butter mixture; cook another 5 minutes. Add shrimp and capers. Increase heat to medium; cook and stir the shrimp until they are bright pink on the outside and no longer transparent in the center, about 5 minutes. Add drained pasta to the shrimp mixture; toss to coat. Top with Parmesan cheese to serve.

DIABLO SAUCE WITH PASTA

Diablo Sauce with Pasta image

This sauce rocks and is so easy and versitile. It came from a restaurant that my husband and I loved and when we moved I talked the chef into giving me the list of ingredients so I could recreate it at home! The original recipe is made with fish, but I love it with shrimp. You will make it again and again!

Categories     One Dish Meal

Time 25m

Yield 4-6 serving(s)

Number Of Ingredients 12

10 ounces chicken broth
3 -4 ounces marinara sauce (or meatless spaghetti sauce)
3 -4 ounces real butter
3 -4 ounces white wine (or white cooking wine)
3 tablespoons flour
2 -3 cloves diced garlic
crushed red pepper flakes (to taste)
salt (to taste)
pepper (to taste)
1 package sliced mushrooms
10 ounces pasta (I like to use linguine or maybe penne)
lightly pan fried chicken breasts (I like mine pounded out a little thin so they cook more even and quicker) or fish (I've used sole, red snapper, and tilapia...they were all good)

Steps:

  • Prepare pasta as directed.
  • Lightly pan fry your shrimp, chicken, or fish in olive oil.
  • Sometimes I lightly bread my chicken, sometimes I don't.
  • Mix flour into marinara so that it blends well in the sacue and doesn't get lumpy.
  • Now, combine all ingredients except mushrooms in a large skillet over medium heat.
  • Stir and bring to simmer for about 3-5 minutes.
  • Add mushrooms and continue to simmer for about 5-8 more minutes or until desired consistancy.
  • This sauce is not overly thick so don't add too much flour.
  • If preparing with sauteed shrimp I add that for just a minute before pouring over pasta or if I'm serving with chicken or fish I just lay either over a small bed of pasta and cover with sauce and maybe a sprinkle of parmesean cheese.
  • Enjoy!

Tips:

  • Mise en Place: Before you start cooking, make sure you have all of your ingredients and cooking equipment ready to go. This will help you stay organized and avoid scrambling in the kitchen.
  • Choose High-Quality Ingredients: The quality of your ingredients will directly impact the flavor of your dish. Use fresh, flavorful ingredients whenever possible.
  • Don't Crowd the Pan: When cooking shrimp, bacon, or vegetables, don't overcrowd the pan. This will prevent them from cooking evenly and can lead to soggy, bland food.
  • Cook Shrimp Properly: Shrimp cooks very quickly, so it's important to be careful not to overcook it. Cook shrimp for just a few minutes per side, or until it is opaque and pink.
  • Use a Good Quality Pasta: The type of pasta you use will also impact the flavor of your dish. Choose a high-quality pasta that will hold up well to the sauce.
  • Don't Overcook the Pasta: Pasta should be cooked al dente, meaning it should be slightly firm to the bite. Overcooked pasta will be mushy and bland.
  • Make a Flavorful Sauce: The sauce is the backbone of this dish, so make sure it's packed with flavor. Use a variety of ingredients, such as tomatoes, garlic, onions, and herbs, to create a rich and flavorful sauce.
  • Serve Immediately: This dish is best served immediately after it is cooked. The pasta will start to absorb the sauce and become soggy if it sits for too long.

Conclusion:

Diablo pasta with bacon-wrapped shrimp is a delicious and easy-to-make dish that is perfect for a weeknight dinner or a special occasion. By following these tips, you can create a flavorful and memorable meal that your family and friends will love.
