4 cups whole milk
3/4 cup sugar
5 large eggs, separated
1 cup heavy cream
1 1/2 cups dark rum
Whole nutmeg

Steps:

  • In a saucepan, heat 2 cups milk but don't boil. Turn off the heat.
  • In a mixing bowl, gradually add the sugar into the egg yolks and whisk until thick and pale.
  • Whisk 1 cup of the warm milk into the yolk-sugar mixture. Add this back to the milk in the pan, stirring over low heat until thickened and blended. Turn off the heat and quickly stir in the cream.
  • Place pan in a large bowl half-filled with ice water. Stir occasionally, until chilled. When chilled, stir into punch bowl and add rum and remaining milk.
  • In a mixing bowl, beat the egg whites until they form soft peaks. Then fold them into the nog. Top each serving with grated nutmeg. Serves 8.

2/3 cup butter, softened
1/2 cup sugar
2 eggs, separated
1 teaspoon vanilla
1 1/2 cups flour
1/4 teaspoon salt
1/8 teaspoon nutmeg
1 cup finely chopped walnuts
1/4 cup butter, softened
1 cup confectioners' sugar
1/4 teaspoon rum extract
1 -2 teaspoon milk
1 -2 drop yellow food coloring (optional)

Steps:

  • In a large bowl, cream butter & sugar until light & fluffy. Add egg yolks and vanilla. Stir in flour, salt & nutmeg until combined. Cover & chill dough for approximately 1 hour or until firm & easy to handle.
  • Preheat oven to 350F; lightly grease a cookie sheet.
  • Whisk egg whites until foamy. Shape dough intol 1" balls; dip in egg white then roll in walnuts. Place 1" apart on greased cookie sheet.
  • With the handle of a wooden spoon, make a 1/2" indent in the center of each cookie. Bake 10-12 minutes or until center of cookies are set. Remove cookies from sheet & cool thoroughly on wire racks.
  • For the filling, combine butter, confectioner's sugar, rum extract & enough milk to make a smooth frosting. Add food coloring if desired. Place frosting into a piping bag fitted with a star tip & pipe into indents of each cookie.

1 1/4 c fine chopped pecans

  • 1. In large bowl, combine cream cheese, powdered sugar, heavy cream, brandy extract, salt, cinnamon and nutmeg. Beat until creamy. Stir in chocolate chips. Drop by rounded teaspoonfuls onto cookie sheets. Chill 5 minutes. Roll into balls. Coat completely with nuts.

2 1/4 c. flour

Filling:
1 T. sugar
1 T. flour
1/4 tsp. almond flavoring
1/2 c. commercial eggnog
1 egg yolk

Steps:

  • In a medium bowl, cream sugar, butter, vanilla and egg yolks until light and fluffy. Lightly spoon flour into measuring cup, level off. Gradually add the flour and baking powder to creamed mixture, mix well. Refrigerate 30 minutes. Filling: In small saucepan, mix sugar, flour and almond flavoring. Gradually add eggnog and cook over low heat until smooth and thickened, stirring constantly. In small bowl, blend 2 T. hot mixture into slightly beaten egg yolk. Return to saucepan, blend well. Cook just until mixture bubbles, stirring constantly. Cool. Preheat oven to 350F. Shape dough into 1" balls. Place 2" apart on ungreased baking sheet. With thumb, make imprint in center of each cookie, and fill with 1/2 tsp. filling. Bake for 11-14 minutes, or until light golden brown around edges. Store in refrigerator. Makes about 40 cookies.

12 eggs, separated
6 cups milk
2 cups heavy cream
2 cups kentucky bourbon
1 cup brandy
1 & 1/2 cups sugar
1 tablespoon vanilla extract (or 1 vanilla bean if you can find it in the spice section)
1 & 1/2 teaspoons nutmeg
1 teaspoon cinnamon

Steps:

  • In a large bowl with a mixer, beat the egg yolks together with the sugar for approx 10 minutes (you want the mixture to be firm and the colour of butter). Very slowly, add in the bourbon and brandy - just a little at a time. When the bourbon and brandy have been added, allow the mixture to cool in the fridge Allow at least 4 hours for this. Once the mixture is fully chilled stir in the milk Stir in 1 & 1/2 teaspoons of ground nutmeg,one teaspoon of cinnamon and 1 tablespoon of vanilla extract or all the inside scrapings of the vanilla bean and discarding the outer protective shell of the bean. In a separate bowl, beat the cream with a mixer on high speed until the cream forms stiff peaks. In another bowl, beat the egg whites until stiff peaks form. Gently fold the egg white mixture into the egg yolk mixture. Gently fold the cream into the egg mixture. After ladling into your cups, garnish with some nutmeg. Enjoy!
