Yield Makes 6 (appetizer) servings

Number Of Ingredients 7

1 (5.5-ounce) log soft mild goat cheese
1 teaspoon pink peppercorns or peppercorn mélange, cracked
1 tablespoon fresh thyme leaves
3 tablespoons extra-virgin olive oil
1 teaspoon grated lemon peel
1/2 small garlic clove, pressed (optional)
Sliced baguette (toasted, if desired)

Steps:

  • Place cheese on plate; using plastic wrap as aid, shape into 5-inch round. Sprinkle with salt, peppercorns, and thyme, and press into cheese. Mix olive oil, lemon peel, and garlic, if desired, in small bowl. Pour over cheese. Serve with baguette.

Tips:

  • For the best results, use cold butter and cream cheese. This will help to keep the crackers flaky and prevent them from spreading too much in the oven.
  • If you don't have a food processor, you can use a pastry blender or two forks to cut the butter into the flour.
  • Be sure to chill the dough for at least 30 minutes before rolling it out. This will help to prevent the crackers from shrinking in the oven.
  • If you want to make the crackers ahead of time, you can freeze them for up to 2 months. Just be sure to thaw them completely before baking.
  • For a fun variation, try adding other herbs or spices to the dough, such as rosemary, oregano, or garlic powder.

Conclusion:

These goat cheese and thyme crackers are a delicious and easy-to-make snack or appetizer. They're perfect for parties or potlucks, and they can also be enjoyed as a simple snack with a glass of wine. With a few simple ingredients and a little bit of time, you can create a delicious and satisfying treat that everyone will love.
