2 cups plain yogurt
1 English hothouse cucumber, unpeeled, halved lengthwise, seeded, grated
1 tablespoon coarse salt
1/2 cup sour cream
2 tablespoons fresh lemon juice
2 tablespoons minced fresh dill
1 garlic clove, minced
6 pita breads, cut horizontally in half, then cut into wedges

Steps:

  • Line sieve with cheesecloth and place over medium bowl. Place yogurt in sieve. Cover with plastic wrap and allow to drain in refrigerator overnight.
  • Mix cucumber and 1 tablespoon salt in small bowl; cover and chill 3 hours.
  • Transfer drained yogurt to another bowl. Mix in sour cream, lemon juice, dill and garlic. Squeeze out as much excess liquid as possible from cucumber. Stir cucumber into yogurt. Season with pepper. Cover; chill at least 2 hours. (Can be made 1 day ahead. Keep refrigerated.)
  • Preheat oven to 400°F. Place pita wedges on baking sheets. Brush with olive oil. Bake until crisp, about 10 minutes. Cool. (Can be made 1 day ahead. Store pita airtight at room temperature.) Serve cucumber dip with baked pita wedges.

If I make it for just a few people, I serve it on the side so you have the option to dip your fruit or top it with as little or as much as you prefer. I make a big bowl of fresh fruit (8-10 cups of whatever is in season) along with this recipe. I have also served it for a family brunch and used this as a yogurt dressing for the fruit. I came back with no leftovers, and several requests for the recipe. This stuff is good!!!

3 medium eggplants (about 2 pounds)
1 small garlic clove, minced
Coarse salt and freshly ground pepper
1/2 cup plus 2 tablespoons extra-virgin olive oil, plus more for drizzling
1/2 cup plain full-fat Greek yogurt
1/4 cup fresh lemon juice (from 2 lemons)

Steps:

  • Using tongs, cook eggplants one at a time over the flame of a gas burner (or a grill), turning as skin chars and bubbles, until completely soft, about 15 minutes. (If eggplant doesn't soften, finish cooking on a baking sheet in a 375-degree oven.) Let stand until cool enough to handle, about 15 minutes. Peel off charred skin and discard. Coarsely chop the eggplants, and place in a colander to drain, about 1 hour. Finely chop, and transfer to a bowl.
  • Using a chef's knife, press flat side of blade back and forth across garlic and 1 1/2 teaspoons salt to make a paste. Mix into eggplant. Stir in oil. Mix in yogurt and lemon juice, and season with salt and pepper. (Dip can be refrigerated, for up to 1 day.) Drizzle with oil before serving.

1 cup plain yogurt
1 cup low-fat sour cream
1 tablespoon lemon juice
1 tablespoon all purpose Greek seasoning, plus
2 teaspoons all purpose Greek seasoning, divided (store bought or homemade)
salt & freshly ground black pepper
4 whole grain pita
cooking spray

Steps:

  • Yogurt Dip:.
  • Cut the cucumber in half lengthwise and grate into a medium mixing bowl. Add yogurt, sour cream, lemon juice, and 1 tablespoon Greek seasoning. Stir to mix well.
  • Season with salt and pepper to taste.

1/2 lb feta cheese, about 1 1/3 cup
2 tablespoons extra virgin olive oil

Steps:

  • Place garlic, feta cheese and olive oil in food processor and process until cheese is roughly crumbled. Remove half of cheese to a bowl. buttermilk (suggested)
20 chicken wings, segments
2 cups all-purpose flour
2 teaspoons salt
1 teaspoon paprika
1 teaspoon cayenne pepper
1/4 cup butter
1/3 cup hot sauce
1/4 teaspoon ground pepper
1/2 teaspoon garlic powder
Greek yogurt
blue cheese
cinnamon sugar

Steps:

  • In a sealable container (large ziplock bag, tupperware, covered dish) marinate wing segments with enough buttermilk to cover and let stand overnight. This step is optional.
  • In a large bowl or ziplock bag, combine flour, salt, paprika, and cayenne pepper and mix.
  • Take a few chicken segments at a time and shake off excess buttermilk. Coat entirely in the flour mixture and set in a sperate container. Repeat with remaining wing segments. Refrigerate coated wings for 1 hour.
  • In a 2-quart saucepan, heat butter and hot sauce just until butter melts. Add black pepper, garlic powder and stir with a whisk to combine. Turn heat to low and keep warm on stove top.
  • Deep-fry chicken, 8 - 10 pieces at a time, in 375°F oil (vegetable oil, canola oil, or peanut oil) for 13 minutes, turning once or twice.
  • Drain chicken on a wire cooling rack or paper towels for 30 seconds, then immediately toss fried chicken in buffalo sauce mixture and remove with a slotted spoon.
  • Repeat with remaining chicken.
  • For the dip, take at least ½ cup of yogurt and add the blue cheese and cinnamon sugar to your preference.
