2 1/2 pounds green beans, trimmed
5 tablespoons unsalted butter
1/3 cup shallot, finely chopped (about 2 medium)
3 tablespoons packed light brown sugar
1 teaspoon kosher salt, or to taste
1/2 teaspoon freshly ground black pepper, or to taste

Steps:

  • Heat oven to 350°F with rack in middle.
  • Spread out pecans on a rimmed sheet pan and bake in oven until pale golden on inside, about 6 to 8 minutes. Cool and coarsely chop.
  • Have ready a colander submerged in a large bowl of ice water. Cook beans in a 6- to 8-quart pot of well-salted boiling water, uncovered, until just tender, 5 to 8 minutes. 1/2 cup skin on sliced almonds
3 tablespoons unsalted butter
5 tablespoons extra-virgin olive oil
2 large onions, sliced thin

  • Fill a large high sided skillet with some water, adding enough to be just shy of the rim of the pan by about 1 inch. Place over high heat and bring up to boil; add a big pinch of salt and the green beans. Cook for about 5 minutes, the beans should still be crisp. Drain the beans and then run them under some cold water to stop them from cooking. Reserve the beans while you start the onions.

1-1/2 pounds fresh green beans, trimmed

1/3 cup orange juice

4 slices bacon, cut into 1-inch pieces
2 large onions, cut lengthwise into 1/2-inch thick wedges
2 (16 ounce) cans green beans, drained
2 tablespoons red wine vinegar
1 tablespoon brown sugar, packed
salt and pepper

Steps:

  • In a large non-stick skillet, cook bacon over medium heat 8 to 10 minutes or until crisp, stirring occasionally. Remove with slotted spoon; drain on paper towels.
