Steps:
- Char peppers over gas flame or in broiler until blackened on all sides. Enclose in paper bag; let stand 10 minutes. Peel and seed peppers. Cut into 1/2-inch-wide strips. Transfer to large bowl. Cook beans in large pot of boiling salted water until crisp-tender, about 5 minutes. Drain. Transfer to bowl of ice water to cool. Drain well. Add to bowl with peppers.
- Whisk oil, vinegar and garlic in small bowl to blend well. Pour over vegetables; toss. Season to taste with salt and pepper. Cover; chill up to 6 hours.
- Line large bowl with lettuce leaves, if desired. Mound vegetables in center.
Tips:
- Choose fresh, tender green beans. Look for beans that are bright green in color and have no blemishes. Avoid beans that are limp or wilted.
- Trim the green beans before cooking. Remove the tough ends of the beans by snapping them off or cutting them with a knife.
- Cook the green beans until they are tender-crisp. Green beans should be cooked until they are bright green and tender, but still have a slight crunch to them. Overcooking will make them mushy.
- Use a variety of colored peppers. Red, yellow, and orange peppers add a pop of color and flavor to this dish. You can also use a combination of different types of peppers, such as bell peppers, poblano peppers, or Anaheim peppers.
- Season the green beans and peppers to taste. Salt, pepper, garlic powder, and onion powder are all good seasonings for this dish. You can also add a splash of lemon juice or balsamic vinegar.
Conclusion:
Green beans with colored peppers is a quick and easy side dish that is perfect for any occasion. It is a healthy and delicious way to get your daily dose of vegetables. The bright colors and flavors of the peppers make this dish a feast for the eyes and the taste buds. So next time you are looking for a simple and tasty side dish, give green beans with colored peppers a try. You won't be disappointed!
