Tips:

  • Choose fresh green beans: Look for beans that are bright green and crisp. Avoid beans that are wilted or have brown spots.
  • Trim the green beans: Cut off the ends of the green beans where the stem was attached. You can also remove the strings from the beans if desired.
  • Blanch the green beans: Blanching the green beans helps to preserve their color and crispness. To blanch the beans, bring a large pot of salted water to a boil. Add the green beans and cook for 2-3 minutes, or until they are bright green and tender-crisp. Immediately remove the beans from the boiling water and plunge them into a bowl of ice water to stop the cooking process.
  • Toast the pecans: Toasting the pecans adds a nutty flavor to the dish. To toast the pecans, spread them in a single layer on a baking sheet and bake at 350 degrees Fahrenheit for 5-7 minutes, or until they are fragrant and lightly browned.
  • Make the dressing: The dressing for this dish is simple but flavorful. It is made with olive oil, lemon juice, Dijon mustard, salt, and pepper.
  • Assemble the salad: To assemble the salad, combine the blanched green beans, toasted pecans, and dressing in a bowl. Toss to coat the beans evenly.

Conclusion:

This green bean salad with toasted pecans is a healthy and delicious side dish that is perfect for any occasion. The beans are crisp and tender, the pecans add a nutty flavor, and the dressing is light and flavorful. This salad is also very easy to make, so it is a great option for busy weeknights.
