2 plums, cored and each cut into 8 wedges
Vegetable oil, for brushing fruit
3/4 cup plain Greek yogurt
1/4 cup honey
1 tablespoon finely chopped mint leaves
1/4 cup pine nuts, toasted

Steps:

  • Preheat grill to medium.
  • Lightly brush fruit with oil and place on the grill. Cook until pineapple and plums are nicely caramelized, turning once, about 8 to 10 minutes. Remove to a plate. Meanwhile, in a medium bowl whisk together yogurt, honey and mint. Place 2 rings and 4 wedges on each plate and drizzle with dressing. Garnish with pine nuts.

12 oz (1 1/2 cups) nonfat plain yogurt
3 tablespoons honey
2 tablespoons fresh lime juice
3 tablespoons finely chopped fresh mint
For skewers
4 firm-ripe plums, each cut into 8 wedges
4 firm-ripe peaches, peeled and each cut into 8 wedges
1/2 ripe pineapple (1 1/2 lb), peeled, cored, and cut into 1-inch pieces
Special Equipment
48 (8-inch) wooden skewers soaked in water 1 hour

Steps:

  • Prepare grill for cooking.
  • Stir together yogurt, honey, lime juice, and mint in a small bowl and chill until ready to serve.
  • Thread about 4 pieces of fruit onto each skewer. 2 (16 ounce) cans pineapple slices, drained
2 lemons, juiced
4 tablespoons white sugar, divided, or more to taste
1 tablespoon minced fresh ginger
3 tablespoons fresh mint leaves
1 (7 ounce) container Greek yogurt

Steps:

  • Place pineapple slices in a shallow bowl. Combine lemon juice, 2 tablespoons sugar, and ginger in a cup and pour over pineapple. Cover and marinate for 2 hours.
  • Combine remaining 2 tablespoons sugar and mint leaves in the bowl of a food processor; pulse until finely chopped. Drain marinated pineapple well, reserving marinade.

6 fresh ripe nectarines, peaches, apricots or 6 pineapple slices
3 tablespoons canola oil or 3 tablespoons vegetable oil
1/2 cup honey
1/4 cup chopped walnuts, toasted
3/4 cup plain Greek yogurt
fresh mint sprig, optional garnish

  • Heat grill to high.
