2 cups graham cracker crumbs
1/2 cup butter (melted)
1/2 cup butter (softened)
2 large eggs
1 teaspoon vanilla extract
2 cups powdered sugar (measured after sifting)
20 -ounce crushed pineapple (drained WELL)
8 -ounce whipped topping (or 2-3 cups homemade whipped topping)

Steps:

  • Grease an 8x8-inch or 9x9 inch baking pan. Preheat oven to 325 degrees.
  • Stir together graham cracker crumbs and melted butter in a medium bowl. Press into your prepared pan. Bake for 10 minutes. Let cool completely.
  • Use an electric mixer to mix softened butter, eggs, vanilla extract until smooth. Gradually beat in powdered sugar. Spread mixture on top of graham cracker crust and bake for 15 minutes. Cool completely.
  • Gently fold together whipped topping and drained crushed pineapple. Spread on top of filling. Cover and refrigerate until ready to serve.

I had this dessert at a dinner recently. I havent actually made it myself, but here's the recipe from the hostess.

1 (20 ounce) can pineapple tidbits
1 (3 3/4 ounce) box vanilla pudding mix
1 (3 ounce) box lemon Jell-O gelatin
1 (4 ounce) carton non-dairy whipped topping
2 cups vanilla cookie crumbs
1/4 cup melted butter

Steps:

  • Drain pineapple, reserve juice.
  • Add water to juice to make 2 cups liquid.
  • Combine pudding mix, gelatin and measured liquid in medium saucepan.
  • Cook, stirring, over medium heat until mixture comes to full boil.
  • Pour into a bowl; chill until thickened.
  • Fold thawed topping into pudding mixture.
  • Meanwhile, combine cookie crumbs and melted butter.
  • Press into 9-inch square baking pan.
  • Bake in 375 degrees oven 8 minutes; cool.
  • Pour pudding mixture into cooled crust.
  • Top with pineapple.
  • Chill about 2 hours until firm.

1/2 cup pineapple juice
1 1/2 cups grated American cheese
14 marshmallows
1 dash salt
1/2 cup sugar
2 tablespoons flour
1 egg

Steps:

  • Combine sugar, flour, salt, pineapple juice and egg in a saucepan.
  • Mix until sugar is dissolved.
  • Cook over medium heat until thick.
  • In a 1 quart casserole, layer pineapple, cheese and marshmallows.
  • Pour cooked mixture over the top.
  • Bake covered at 300 degrees for 20 minutes.

1 cup all-purpose flour
1 cup sugar
1 teaspoon salt
1/2 teaspoon baking soda
1 egg, lightly beaten
1 can (20 ounces) unsweetened crushed pineapple, drained
1/2 cup sweetened shredded coconut
1/2 cup chopped macadamia nuts
3 tablespoons brown sugar

Steps:

  • In a bowl, combine the flour, sugar, salt and baking soda. Stir in egg and pineapple until well blended. Transfer to a 9-in. pie plate coated with cooking spray. Combine the coconut, nuts and brown sugar; sprinkle with batter., Bake at 350° for 40-45 minutes or until a toothpick inserted in the center comes out clean. Serve warm.

This is a moist and delicious cake that our family loves. One cake mix actually makes two 9 x 13 cakes or one big cake in a jelly roll pan. Perfect for your big family parties!

1 (15.25 ounce) yellow cake mix (Betty Crocker)
1/2 cup vegetable oil
3 eggs
3 (3.4 ounces each) packages instant vanilla pudding mix
3 1/2 cups milk (cold)
1 1/2 teaspoons coconut extract
1 (8 ounce) package cream cheese (softened)
1 (20 ounce) can crushed pineapple (drained and reserve juice for cake)
2 cups heavy whipping cream
2/3 cup powdered sugar
2 teaspoons vanilla
2 cups flaked coconut (toasted)

Steps:

  • Preheat oven to 350 degrees.
  • Make cake batter according to package directions adding in the vegetable oil, eggs, and using pineapple juice reserved from crushed pineapple in place of water.
  • Pour into two greased 9 x 13 pans or one greased 18 x 12 jelly roll pan.
  • Bake for 15 minutes or until toothpick inserted near the center comes out clean.
  • Let cool completely.
  • In a large mixing bowl combine the pudding mixes, milk, and coconut extract; beat for 2 minutes.
  • Add softened cream cheese and beat well to smooth out all bumps, and then gently stir in pineapple with a spoon.
  • Spread pudding mixture over cooled cake.
  • Mix together whipping cream, powdered sugar, and vanilla until thick.
  • Spread this over the pudding layer.
  • To toast the coconut, spread it on a cookie sheet and bake at 325 for 5 to 10 minutes until barely browned.
  • Sprinkle cooled coconut over the top of the cake.
  • Chill cake for about 2 hours or until ready to serve.
