Tips:

  • Choose the right cut of pork: Pork shoulder or pork butt is the best cut for this stew, as it is flavorful and becomes tender when slow-cooked.
  • Brown the pork before stewing: Browning the pork adds flavor and helps to develop a rich, caramelized sauce.
  • Use a variety of vegetables: This recipe calls for a variety of vegetables, including carrots, celery, onions, bell peppers, and tomatoes. Feel free to add or substitute other vegetables that you like, such as zucchini, squash, or corn.
  • Add spices and herbs: Spices and herbs add flavor and complexity to the stew. This recipe uses a combination of garlic, cumin, oregano, and paprika. Feel free to experiment with other spices and herbs that you like.
  • Cook the stew low and slow: The key to a flavorful and tender stew is to cook it low and slow. Simmer the stew for at least 1 hour, or until the pork is fall-apart tender.
  • Serve with rice or bread: This stew is traditionally served with rice or bread. However, it can also be served with other sides, such as mashed potatoes, roasted vegetables, or a salad.
