1 tablespoon olive oil
1 shallot, minced
1 garlic clove, minced
1/4 cup homemade or low-sodium store-bought chicken stock
2 tablespoons dry white wine, such as Sauvignon Blanc
1 tablespoon fresh thyme leaves
1 tablespoon unsalted butter
2 tablespoons fresh lemon juice
Freshly ground pepper, to taste

Steps:

  • Cover potatoes with water in a pan. Add 1 tablespoon salt, and bring to a boil. Reduce heat, and simmer until tender, about 10 minutes. Drain potatoes and halve lengthwise.
  • Heat oil in a large skillet over medium heat. Add shallot and garlic, and cook until soft, about 2 minutes. Add potatoes, cut sides down, and cook until golden brown, about 10 minutes.
  • Stir in stock, wine, and 1/2 teaspoon salt. Cook until liquid is reduced by a third, about 2 minutes.
  • Remove from heat. Add thyme and butter, and stir until butter has melted. Stir in lemon juice, salt, and pepper.

Tips:

  • Choose the right potatoes: Fingerling potatoes are the best choice for this recipe, as they are small and have a thin skin that crisps up nicely in the oven.
  • Scrub the potatoes well: This will help to remove any dirt or debris.
  • Toss the potatoes in olive oil: This will help to coat them evenly and prevent them from sticking to the pan.
  • Season the potatoes with salt and pepper: This will help to enhance their flavor.
  • Roast the potatoes at a high temperature: This will help to caramelize the potatoes and give them a crispy exterior.
  • Add the lemon juice and zest: This will help to brighten the flavor of the potatoes.
  • Serve the potatoes immediately: This will ensure that they are crispy and hot.

Conclusion:

This recipe for Healthy Roast Fingerlings with Lemon is a delicious and easy-to-make side dish that is perfect for any occasion. The potatoes are crispy on the outside and fluffy on the inside, and the lemon juice and zest add a bright and refreshing flavor. This recipe is also a great way to get your kids to eat their vegetables!
