4 large eggs

Sautéed Bananas
1 tablespoon unsalted butter
1 teaspoon coconut oil or vegetable oil
3 very ripe bananas, sliced
1 cup honey

Steps:

  • To Make The Waffles
  • Preheat a waffle iron according to the manufacturer's directions. Preheat the oven to 200°F.
  • In a food processor, pulverize the pecans until finely ground. Add the eggs, butter, honey, vanilla, baking soda, and salt, and blend well.
  • Grease the waffle iron using a partially wrapped stick of cold butter. Hold the butter by its wrapped end and rub the other end all over the waffle iron's cooking surface. From Tyler Florence, Ultimate Thanksgiving. I like the idea of using banana and honey instead of sugar for the sweetness. I can't stand those yucky, overly sweet sweet potatoes that we here in the south usually serve. This is a better option for those of us who enjoy sweet potatoes without all the sugar. I did retain the pecan topping but you can probably cut it back to 1/2 cup of brown sugar. Enjoy!

5 medium sweet potatoes, scrubbed
4 bananas, unpeeled
1 cup unsalted butter, at room temperature
1/4 cup honey
kosher salt
1/2 cup all-purpose flour
3/4 cup dark brown sugar
1 1/2 cups pecans, chopped

  • Preheat the oven to 375 degrees F.
  • Prick the sweet potatoes all over with a fork, put them in a roasting pan and roast for 30 minutes. Toss the bananas into the pan and continue roasting for 10 to 15 minutes, until both the bananas and potatoes are very soft. Remove the pan from the oven but don't turn the oven off.
  • When the potatoes are cool enough to handle, scoop out the flesh into a large mixing bowl. Peel the bananas and add them to the bowl along with 1 stick of the butter, and the honey.   • Remove bananas from the bunch. Place whole bananas with skins on a preheated grill to medium. Grill for about 7 minutes turning once until the skins begin to brown and soften.

100 g vanilla ice cream (2 frozen squares)
